Savory Cheddar Zucchini Muffins

Pretty good overall. I reduced the flour to 1 1/2 cups and added 1/2 cup corn meal. I also squeezed the grated zucchini between paper towels to reduce the liquid. The muffins came out crispy on the outside and tender on the inside. They made a nice addition to our supper of white chicken chili. My family loved them!

Sour Cream Corn Bread

Great cornbread! I added a couple of chopped jalapeno peppers, 1/2 cup of fresh corn kernels, and some shredded cheddar cheese. Delicious! My husband said it was the best cornbread he's ever had.

Oatmeal Banana Nut Bread

This is the best banana nut bread recipe I have ever tried. I have used this same recipe countless times and have made very few adjustments. I recently started substituting 1/3 of the shortening with fat free vanilla yogurt, with good results. I have also started adding flax seed along with walnuts for the health benefits. My kids and friends rave about this bread!

Pasta with Roasted Butternut Squash and Sage

Very good, but dry. As other reviewers have noted, I used milk with cornstarch instead of cream, but I almost tripled the amount of liquid to keep the dish from being too dry. Other than that, great mix of flavors.

No Fail Pie Crust III

This crust was a total failure for me, and I am an experienced baker. I believe the ratio of flour to butter is off, with way too much butter, because the dough was pulling together before I even added the egg and other liquid. It turned into a sticky mess that I had to scrape off the pie mat. Couldn't even get it into the pie plate. I'm going back to the tried and true Betty Crocker recipe!

Eggplant Chips

This recipe has quickly become a staple of my family's summer diet. We have made it three times in the past two weeks, and plan to make it frequently. We have tried both Japanese eggplant and globe eggplant, and prefer the Japanese. We have also substituted parmesan cheese for the Romano and olive oil instead of plain vegetable oil. This is a great recipe!

Pumpkin Bread II

I have made this recipe several times and it always comes out great. I made it as written, but then made some changes to make it a bit healthier. I now use whole wheat flour and egg substitute. I decrease the amount of sugar to about two and a half cups. I also substitute half the oil with applesauce, which surprisingly makes no difference in how moist it comes out. As written, I would give this recipe 3 stars, but with changes, I gave it a 5.

Zucchini Bread VII

This is wonderful bread. My husband described it as "outstanding!" I used whole wheat flour and added the grated peel of one lemon. We enjoyed the bread toasted for breakfast with a spread of cream cheese - yum!

Pumpkin Turkey Chili

My family loved this recipe, including my 11 year old son and my 8 year old daughter. I added Adobo seasoning (from Penzeys) and a can of pinto beans. It isn't too pretty to look at, but it tastes great! I never would have thought pumpkin in chili would work, but it adds a nice flavor overall.

Whole Grain Waffles

This is a keeper. They came out light and crispy, and my husband and kids loved them. The only change I made was to use soy milk instead of skim milk. We had them with sliced fresh peaches, toasted pecans, and maple syrup. Delicious!

Chocolate Mice

My kids and I had a blast making these adorable and yummy treats. They were the hit of a Halloween party we attended. We put them on a tray covered with coconut that had been dyed with yellow food coloring (like straw) and sprinkled small chocolate sprinkles around them (like droppings!) Very realistic.

Cranberry Muffins

Very tangy and good. I added 1/3 cup quick-cooking oats and 1/2 cup chopped pecans. As a previous reviewer recommended, I soaked the chopped cranberries in sugar water overnight and I believe this helped cut the tartness a bit. My husband loved them, and he is not usually a big fan of muffins.

Zucchini Muffins

I also changed a few things and my family loved them. I used almost twice the zucchini, used a whole egg instead of egg whites, and used vanilla soy milk instead of fat free milk. I added chopped walnuts, which really helped the texture of the muffin. A sprinkle of oats on top before baking made them pretttier to look at, too.
