Classic Peanut Butter Cookies

The last batch of these are in my oven right now and they are awesome! I followed the suggestion of other reviewers and added an extra 1/4c. flour to the recipe and they are perfect! I had a timing issue, they took a few extra minutes with my oven, but I will definately be using this recipe in the future! The perfect PB cookie! Thanks for this recipe :-)))

Banana Banana Bread

I just made this recipe for the first time tonight. I also added walnut halves because I love the flavor of banana and walnut together. The loaf looked gorgeous when it came out of the oven, however when I cut into it, I noticed how extremely dense it was. The flavor also was very bland. I would make this again, but it definately needed cinnamon. Without it, the flavor seemed to be lacking.

Warm Jalapeno Popper Dip

I should have mentioned to use room temperature cream cheese. If it's too hard, it will not blend as easily. I love this dip and it's always a hit at parties. Enjoy!

Chocolate Chip Cheese Ball

Pretty good! I brought this to a Thanksgiving dinner last year and it was super easy to make. I reversed the nuts and chocolate chips (I added the nuts into the mix and rolled it in mini choco chips after it was done.) I served it with graham cracker sticks. Tastes just like a cheesecake. I would only recomment to let it sit out for about 45 mins before you try to eat it because it gets really hard and breaks all your crackers! All in all, the taste was great and super easy to make.

Cookies 'n' Creme Fudge

Hands down, the BEST recipe for fudge EVER! I have made this countless times over the years. Anytime I go over someone's house or to a party, this is the recipe I bring. It is an absolute hit with everyone. Everyone asks for the recipe and it's so incredibly easy. I've got it practically memorized because I've made it so much. I brought this to a Halloween party last year and used orange food coloring in the chocolate and it was a huge success! Why make any other kind of fudge? A MUST TRY! Fabulous! :-)

Chicken Enchiladas V

This is an awesome recipe! I was leary with the chicken soup, but it turned out perfect. I followed the recipe as written here and made it for a family mexican dinner. Everyone raved about it, went back for seconds, and asked for the recipe! This is definately a keeper and will be made in my house again!

Quick and Easy Chicken and Rice

This recipe turned out really good! I was skeptical after making the rice because it didn't look like enough at all, but it turned out perfect! I followed the recipe listed, but I made some additions: I added half a box of frozen peas, half a box of frozen broccoli florets (I'm pregnant and wanted to bump up the veggies), I added 1 cup of cheese to the veggie/chicken mix itself, then topped it with 1 cup before baking. Came out awesome! I think next time I'll leave out the fresh mushrooms, but that's just a personal preference. I also baked it for 30 mins covered, then removed the foil and let it go another 10 minutes so the cheese was gooey. The gravy mix reminded me of a chicken pot pie and being that it set up really well (not watery) I think I may play around with that idea next time. All in all, great recipe!

Pork Medallions with Sauteed Apples

I made this for dinner last night and was extremely disappointed. I cooked the pork on the stovetop with a bit of olive oil and it came out fine, except for there was way too much thyme. Perhaps it's just my taste. Also, the apples took WAY longer than 2 minutes to soften and the broth/cornstarch mixture made a sauce that was white-ish and thick. Very unappetizing. I ended up adding a bit of cinnamon to make it darker. Also, the addition of the green onions to the apple mixture is not recommended... All I tasted was the onions. I would have also peeled the apples first; the skins remained fairly tough. I may try this recipe again making additional changes, but as it is written here, I would not make it again.

Buffalo Chicken Dip

This recipe is awesome! I made it for the first time just now and it came out great! I used 8 oz. of cream cheese and 8 oz. of sour cream (I didn't have enough cream cheese) and I added a little more cheddar cheese to the top of it. I also added only about 1/4c, of the Ranch because I thought it was seeming a little loose. I put it in my little dipper slow cooker and it's perfect. I could eat the it all myself! Definately a keeper!

Cocktail Meatballs II

This recipe was great! I made it for a Superbowl party and it was a hit. I used frozen prepared meatballs, one bottle of chile sause, and one regular jar of grape jelly. I melted the jelly and sauce in a small pot, then transferred it to my slow cooker and it worked out perfectly! Some people were a little leary when they found out it was grape jelly, but they loved it all the same! I will keep this recipe on hand for my get-togethers!
