About this Cook
I learned to cook by watching my mom who never used a recipe. I always enjoyed her meat and potatoes meals. Now that my kids are out of the house I enjoy taking the common meals and taking them up a few notches. I am currently being treated for Lung Cancer and love the extra time to cook meals for my wife.

I love cooking Thanksgiving Dinner and coming here to Allrecipes to make improvements on my own dishes. I never use one recipe, but I steal ideas from several dishes that are similar. This has helped to make these special meals crazy good.

Burnt chicken in the BBQ, what? Did I forget about that again? Fortunately the game I was watching at the time worth the cremated chicken.

Macadamia Coconut Icebox Cookies
The was a good recipe, the results was a very nicely balanced cookie that is a little chewy. I got tired of chopping nuts and only used 1 cup of nut instead of 2 and the finish seemed right. I tried a chocolate chip version of this recipe by cutting the white sugar in have and replacing it with brown sugar this turned out well too.

Apple Stuffed Pork Chops
Made some changes to this great recipe because my wife has to stay away from bread and sugar. I replaced the bread with a cup of Old Fashioned Oatmeal, 1/3 cup Splenda(sugar), 1/3 cup raisens, dash of nutmeg, then the rest of the ingrediannts. I used only 4 pork chops and put the leftover apple, oat, raisen mixture and spred it over the browned pork chops for baking. What came out of the oven was beautiful and taisted heavenly.
