Bou's Chicken

I made this last night with bone in legs and thigs and it was very good. I used brown sugar instead of white and it wasn't as sweet. Also added hot sauce to zing it up a bit. The best part is that this morning I defatted the sauce and deboned the chicken and will serve this as "chicken sloppy joe's" over hamburger buns. This is a simple recipe that gives you two for one and I have given it to my college age friends as it is very inexpensive and easy.

Bavarian Brownies

I make these all of the time, in fact, we just had them at a party tonight. The mix is very dry, but the brownies turn out exellent and they are so easy. Try them topped with vanilla ice cream and chocolate sauce. Yum!

Chicken Gruyere with Sauteed Mushrooms

Thanks for a great recipe. Made this last night and the chicken was moist and the sauce very flavorful. I browned the chicken in equal amounts butter and EVOO and then proceeded with the recipe. Everyone loved it, and I am looking forward to the leftovers. Will definitely make this again.

Italian Sausage Soup

Sounded good, so made it for dinner last night. Yummy. I added a chopped onion to mild sausage, the garlic and a pinch of red pepper flakes. I also used 1 can chicken broth and 1 can beef broth. Both hubby and I licked our bowls.

Awesome Ham Pasta Salad

I normally don't like pasta salad, but this was wonderful. I followed the recipe exactly except for adding 1 cup of diced swiss cheese. Everyone loved it - even my friend who doesn't eat bell peppers. Next time will add one green and one orange or yellow pepper as there is already red from the tomatoes. Also used 12 oz of rotini primavera. Really yummy. Thanks.

Pan Fried Halibut Steak with Light Green Sauce

Had guests for dinner last night and was looking for something different to fix. YUM, YUM, YUM. I followed the directions exactly, except the fish monger did not have halibut so used red snapper. The flavors were spot on and we all loved this. It will become a regular. Thanks for the recipe Charter Guy.

Cranberry Hootycreeks

I loved the name and wanted a new cookie for our Christmas gift basket. We made a double batch and absolutely fell in love with these. If you make them from the jar recipe the egg and butter don't mix well, but it does not affect either the texture or flavor of the cookie. When I just want to make them I cream the butter with the sugars. Definitely have become one of our all time favorites.

Ultimate Double Chocolate Cookies

My daughter-in-law and I look for new cookies to add to our Christmas plate gifts. Based on the reviews I made a batch of these. The flavors are very complex and not overly sweet. We agreed, that along with the cranberry hootycreek recipe, this is a MUST cookie and a definite keeper. Thanks for the recipe Carol P.

Grilled Roasted Red Pepper and Ham Sandwich

I believe this is the 5th day in a row that I have had this for lunch. I use lots of mayo on the inside, whatever bread I have on hand, and whatever cheese, though I do love munster or swiss. Do make sure you dry the peppers really well on paper towels before making this. I also love to add several fresh basil leaves or some fresh spinach leaves before grilling. I don't always use the parmesan, but I do grill it over medium low. Takes about 5 - 7 minutes per side and is a lovely golden color. YUM!! Great recipe Lori.

Hooley's Hot Dog Relish

I saw this and thought I would like to try something different. Boy was this it. My husband read the recipe while I was making it and he said he was prepared Not to Like it, however, both of us loved this. Makes a lot, but I will be sharing some with my friends and family. Made it exactly according to the recipe and will use this often, especially in the summer. Think it will be good on hamburgers as well. Thanks for the recipe Hooley.

Yin-Yang Salmon

I made this last night, exactly as written and we loved, loved, loved it. We eat a lot of salmon and my husband is very fussy about how it is served, so I wasn't sure how he would like it. I said maybe next time I would marinate it, then grill it, and he said it was brilliant the way it was. As there are only two of us, I cut the recipe in half and used hot wing sauce and YUM, YUM, YUM. Thank you so much for this recipe. It is definitely a keeper.

Eggplant Parmesan II

I started with the basic recipe and will make that again, but wanted to make casserole like Trader Joe's used to sell that had a phyllo crust. I started with 1/2 pkg phyllo dough. Prepared the eggplant as suggested, though only used two and coated the baking sheet with extra virgin olive oil. Melted 1/2 stick butter; generously coated the bottom of a 9x13x2 dish. Put several sheets of phyllo in the bottom, brushed with melted butter, added more dough (total of probably 8 sheets). Placed a layer of eggplant slices on top; made a chiffonade of fresh basil which I sprinkled over the eggplant, added a layer of shredded mozzarella (slices of fresh would be great); then 1/2 jar of a good marinara sauce. Repeated the eggplant, basic, cheese marinara sequence and then added an additional 8 sheets of phyllo dough brushed with butter. Dealing with the phyllo dough is the hardest part of this recipe. Make sure to keep the unused dough covered with a damp towel so it doesn't dry out. Baked for 30 minutes at 350 and it was fabulous. Served with fresh asparagus and a glass of Merlot. I love baking the eggplant as it is a lot less messy and the eggplant doesn't absorb as much oil. Will do my eggplant for all recipes this way from now on.

Oregon Salmon Patties

Made this for dinner last night with 3 6 oz. cans of salmon. I added the juice and grated rind of 1/2 lemon, and only added about 3 tbsps of the reserved liquid. I followed others suggestions and refrigerated them for several hours (which I think also helped meld the flavors). Served it with the lemon tarragon sauce (substituted dill for the tarragon). My husband, who is a food snob, told me he didn't use the sauce because the patties were excellent on their own. Great recipe Jonnylen and it will become a staple.

Belgian Salad

I made this earlier today and it is "marinating" as we speak. I too used evoo and red wine vinegar and only used 2 tbsp of sugar (and it's still sweet). One cup would make my teeth fall out. Added the black beans and I am also going to add some fresh basil to it tonight just before I serve it. Yum - thanks for the recipe.

Foil-Pack Taco Chicken Dinner

OK, so I had chicken thighs and homemade taco seasoning. But I am on a diet, so I substituted thinly sliced onions for the potatoes. I also only had sliced jalapeno peppers which I diced up and put on top of the chicken. Then I had white American cheese which I sliced up into thin sticks. I had tomatoes so I diced them up, and put them on top of everything, sprinkled a little more taco seasoning on top, sealed the whole mess up and baked it. OMG - what a great meal. Sour cream didn't fit into the diet, but when I am skinny, stand by as I am going to have it on top. So, good. I think made according to directions, using onions instead of potatoes, the whole family would love it.

Barbie's Tuna Salad

I found this recipe several months ago and saved it but did not make it until today. Yumm - O. I made it according to the recipe, using less mayo and low fat. Only two things different were fresh parsley vs dried and I added a tablespoon of celery. This is my new favorite tuna salad. Thanks for sharing.

S'mores

This was awesome. Had some friends over with lots of kids and made these and they were an absolute hit. Wanted a recipe as close to a s'more as possible that I could make all year and this is it. Did use the entire pkg of graham crackers (equal to 4 1/2 cups) with the one stick of butter and prebaked bottom for 5 mins. Thanks for a "memory making" recipe - s'mores at the beach.

Homestyle Turkey, the Michigander Way

I am trying to omit butter, but saw this recipe and had two turkey thighs in the refrigerator. I knew they could be dry if not cooked properly, so put them in a casserole dish, poured homemade chicken broth over them, sprinkled liberally with fake butter powder, the minced dried onion, some Emeril's seasoning and a handful of fresh parsley. Baked for 1 hour 1/2 and it was absolutely devine. Very moist and flavorful. I may be dieting, but I don't feel deprived. Will use this again, even for chicken.

Easy Pasta Fagioli

I have recently become a vegetarian and look for great new recipes. I was babysitting for my 6 year old granddaughter last night (who doesn't like anything green)and decided to make this soup. OMG! She ate her bowl, my hubby licked his clean and I can't wait for the leftovers today. I did follow the advise of others and used 1 15 oz can tomato sauce, 1 15 oz can diced tomatoes and 1 32 oz container vegetable broth. I also threw in 1/2 of a red onion instead of 1 slice and wanted to use up a zucchini and some green beans, so threw them in as well. This takes to a lot of variations and you should really try it.Thanks for a wonderful recipe Cindy.

Chile Garlic BBQ Salmon

OMG - This was absolutely fabulous. Used a 1 lb fillet, marinated in the sauce (made the entire batch) for 1 hour, then baked sealed in foil at 425 for 15 mins, opened for 5 mins and yum, yum, yum. Served it over basmati rice and sauted fresh spinach. Great flavor that still lets the salmon stand out. I will make with the full three pounds on the grill but will triple the sauce. This is now one of our favorites. Thanks for a really great recipe. Oh, and I used honey instead of brown sugar.
