Kettle Corn

I made this recipe this afternoon. I did substitute 2 tablespoons of clarified butter for oil for a buttery flavour. I also added 1/2 teaspoons sea salt with the butter, oil, sugar mixture. The clarified butter helps to prevent burning because the milk solids are removed. For people that are having trouble with burning a heavy bottomed pot is essential and keep the pot moving. This is as easy as making regular popcorn. I will be making again for sure.

Old-Fashioned Potato Soup

Nice simple soup, I added a little parmesan cheese at the end of cooking and I also sautéed a stalk of celery with the onion. I will defiantly make this soup again. My vegetarian daughter made this soup using veggie stock equally as good.

Tiramisu Layer Cake

I made this last night, so cool and smooth and luscious on a hot summers evening. I have made many traditional Tiramisu's this is nice for a change. I used a scratch cake recipe Simple White Cake; from this site I doubled the recipe. I did have to change the addition of the coffee liquor (some people can't have any alcohol. So I made a simple syrup and, instant coffee for the cake, same instant coffee for the filling. I did come up with an idea for the whipped cream; I added the Kahlua to 1 cup of whipping cream and brought to the boil simmered for a few minutes to burn off the alcohol it cooks down a little so just add enough to bring it back to the right measurement. I chilled with the other cup of whipping cream when it was time to beat it worked like a charm. For some people that had trouble with the "Frosting" being to soft I put my bowl and beater in the freezer helps with the beating especially when the kitchen is warm and I added a packet of whipped cream stabilizer, kept my cream on the cake and looking fabulous. I beat a little more whipping cream and placed dollops around the edge of the cake after topping the cake with chocolate shavings then placed an espresso bean on each dollop. Lots of ooo's and ah's. My son who's 16th Birthday is in September has asked for this cake. I will make it in two 9x13 pans and layer it. I wish I had taken a picture of my cake but by the time I thought of it there wasn't much left I will try to remember to take one of my next cake.

Brooklyn Girl's Penne Arrabiata

LOVED IT! I made only one slight addition I added sliced black olives. I had this in an Italian restaurant and they added olives gives the sauce a slight saltiness. I don't know if people realize this but Arrabiata means angry hence the amount of red pepper flakes we did add a little(which I like very much). I will make again and again for sure thanks VAMPYRESKA

Tacos in Pasta Shells

We loved this and it was better the next day. I didn't have taco sauce so I whizzed salsa in the processor and I added a little cayenne pepper (I like things spicy). One thing I would do next time is to pour a little sauce on the bottom of the casserole. We found the shells got a little crispy. I mixed the cheeses and (I subtitled corn chips) corn chips together then sprinkled over casserole. My daughter suggested that this would be good even without the shells. Will defiantly make again and again.

Make-Ahead Mashed Potatoes

I made these for Thanksgiving diner (Canada) on Monday and they were a big hit. What a great time saver. I will substitute fat free cream cheese and fat free sour cream the next time I make them and see how they turn out. I think keeping a container of them in the freezer would be a great idea. These tasted great without gravy.

Honey Garlic BBQ Sauce II

Very good, I omitted the hot sauce, as well as the cornstarch,water and butter. I cooked it very slowly and it became thick and sticky the house smelled sooooo.... good. At supper time all that could be heard was mmmmmm, lips smacking and fingers being licked (not that I approve of finger licking) but who would want to miss a drop. Now this if finger licking good!!! I had guests for supper and everyone wanted the recipe and my daughter who is a Bulls eyes lover said that this is much better I agree.

Three Cheese Garlic Scalloped Potatoes

I made these a couple of weeks ago. Very good I only changed this a little I crushed the garlic and added it to the cream (I tripled the recipe and wanted the garlic to be even through the potatoes) I also added finely chopped onion like another reviewer. Go easy with the salt with all this cheese especially with the parmesan. I will be making this for Easter dinner this Sunday to go with the ham. I find that if I par boil the potatoes (cover potatoes with water and bring to a boil for a couple of minutes) then slice they cook faster and the sauce is creamier I think because the potatoes don't absorb to much of the moisture, maybe that just me.

Honey Lime Chicken Wings

Very tasty I have made this with chicken wings and I havemade with cubes of chicken breast andput in skewers with cherry tomatoes and peppers. Great for picnics. Will make again and again.

Caramel Corn III

Oaky but I like my recipe better but till quite good. I had to make 3 batches of caramel to coat all the popcorn, (that's why only 3 stars) I also turned the oven up to 300F this seemed to keep the caramel softer so it coated the popcorn better when stired. My recipe has more corn syrup and is just brought to the boil and no baking soda. My daughter works in a popcprn making store and says they too use baking soda but I don't care for how it make the caramel thicken up so fast, I found thios harder to work with. I will make again I likedthe crunch and the family gobbled it all down right to the last kernel. I daught liked it too!

Melting Moments I

I made these at Christmas. My Aunt made something very much like this many years ago the name was the same. I remember icing was sandwich between the two domed shaped cookies, and the icing was always tinted pink. Great for baby or wedding shower cookie plate. Cream cheese adds a nice second flavor, and letting the cookies mellow for a week or two just makes them better.

Chili-Lime Chicken Kabobs

I have made this so many times I habve lost count. Great on the BBQ or if it;s to cold outside I broil (but watch it not to close to the top)I have also cooked in a skillet if I am in a real hurry. Try cooking with tomatoe peppers and pineapple chunks on skewers, my daughter par boiled potatoe then put that on a skewer with the chicken brushed the potatoe with butter great for a picnic.

Mother's Applesauce Cake

I made this a cou[le of nights ago. I left out the raisins (kids don't like raisins but will add next time) I served with a lemon sauce, and the next night with butterscotch sauce I liked the lemon better. Nice moist cake.

Peppy's Pita Bread

I have made this recipe or several years and just love it. There is nothing so satisfing and make anything to do with bread. My kids love them I make a big batch and keep them in the freezer. Great for school lunches. When my children were young it was peanut butter with jam or honey, now it's chicken caesar.

Whipping Cream Pound Cake

Made this cake the other day. My family just loved this cake. Dense,firm, and the crumb was very fine. Easy and tasty what a great combination. I wasn't sure about the amount of vanilla but I am sure glad I used the full amount a really nice vanilla flavor. I made the recipe Strawberry fluff (All Recipes) to go with it I didn't frost the cake but I added a spoon to each slice how pretty and delicious.

Cooking Light magazine's Chicken Parmesan

Now this is a quick and flavorful chicken dinner. I made my own bread crumbs(not rocket science) I added a litte salt, pepper, oragano, and the parmesan cheese then followed the rest of recipe. Tender, moist, crunchie crust, fast, easy, a real keeper. All you need to sever with it is a crispy salad and warm crunchie bread. Great the next day if you have any leftovers, the flavors have mingled even more.

Easy Cream Cheese Danish

Loved the filling, but I don't like canned dough. What I did use was puffed pastry and once philo. I rolled out puffed pastry then cut in 4 inch squares, put a tablespoon of filling in centre and pinched opposit corners baked 15 minutes in a 400F oven delious. Philo is just as easy. Unroll thawed pastry cut in 5 inch squares put into muffin pans then a spoon of filling. Taste is much better and realy not much more work with frozen puff and pholo pastry. Finish both with a sprinkle of powered sugar.

Blueberry Cream Cheese Pound Cake II

I thought the cake was very tasty. I served this to my mother in law who liked it very much. We did make one change to the recipe I used lemon cake mix and instead of BLUE icing I added lemon juice. Nice flavour combination.
