About this Cook
I am a 40-something RN, married to a sweet husband who loves my cooking, and have 2 grown children. I am mostly a self-taught cook, so it has taken me a long time to become confident in my cooking abilities, with much trial and error. I used to cook just because it was my job as the mom, but now I love it and am constantly reading cookbooks and magazines to get more ideas and learn new skills.
My favorite things to cook
I have always loved to bake, especially cakes, cookies, and fruity desserts. Being very health conscious, I am always tweaking these recipes to try and make them a bit healthier, without destroying the taste or texture. I also love to cook dinner for my family, especially when I have the time to cook from scratch, rather than using convenience foods.
My favorite family cooking traditions
Since my children were little, I have always made breakfast on Sunday mornings, usually involving pancakes, waffles, or muffins. I also love making a special birthday cake for each member of the family on their special day.
My cooking triumphs
I made a yummy birthday cake for my hubby in the shape of a guitar. Since he's a musician and adores his Taylor guitar, he was thrilled!
My cooking tragedies
There are a few disasters to choose from, but the best one was when I was around college age and made several family members some homemade quick breads for the holidays. Unfortunately, I put in some raw sunflower seeds which turned green after baking, and I think some may have even sprouted!

Vegan Cupcakes
I made these with my little niece today, and we both loved them! She really wanted chocolate, so I added 2 tablespoons of cocoa powder plus 1 1/2 tablespoons more of almond milk. I also subbed canola oil for the coconut oil, and they turned out great! (The chocolate flavor was still pretty subtle, so if you want a dark chocolate flavor, you'll need to make more adjustments.)

Carrot Cake
I made this yesterday for my mom-in-law's birthday, and it was a big hit with everyone that tried it; many had seconds! We had the leftovers for breakfast this morning and it was even better. (The only reason we had leftovers is because we had people there that insist they hate carrot cake; wouldn't try it!) The only changes I made were to use white whole wheat flour instead of all-purpose flour, and I used organic cane sugar, which adds a little molasses taste. So good!

Whole Wheat Honey Bread
My friend gave me her breadmaker that she no longer used, and we're in heaven! This recipe is the first one that I tried... so yummy! I made a few changes to make it dairy free...I used Earth Balance stick margarine instead of shortening or butter, and used 3/4 cup water with 3/8 cup soy milk, warmed to about 80 degrees in the microwave. (Instead of the milk powder.) I also added a little vital wheat gluten for better rising, about 2 tsp, but you could probably add more. I adapted the recipe for a 1 and 1/2 lb. loaf, so your measurements might be a little different. I used the whole wheat setting with a medium crust, and it has ocme out perfectly every time!
