Eggnog II

Simple but just what I was looking for in a cooked eggnog. I made it the first time with the cream but it was almost too thick. I left out the cream and added rum flavoring. It's just like the store bought eggnog that I love but at less than 1/4 the price. Some tips that made this easier for me: Cook this over medium heat in a double boiler (or in my case a metal bowl over a pot of boiling water). This will make the cooking take a little longer but will all but eliminate the risk of curdling. The target temperature should be 170F. This is hot enough to kill any bacteria but not hot enough to make scrambled eggs.

Mom's Apple Fritters

These weren't flat enough- they were more like dumplings. Next time I'll try piping the batter into the oil to try to get it flatter. The batter wasn't sweet enough for my taste. The end result was more like a puffy, savory, scone. Next time I'll add a lot more sugar to the batter and glaze them. The apple to batter ratio was too high. The apple pieces burnt in the oil. I'm going to double the batter next time.

Homemade Yogurt

Savory Pork Stew

I had a bunch of pork that I needed to use. This recipe was exactly what I was looking for. I have to admit that I used what I had. I used turkey stock (homemade, frozen from thanksgiving, and cream of chicken soup. They worked fine. I really liked the milk base. The texture turned out very hearty and it made great leftovers.

Marzipan Christmas Kringle (Juleskringle)

I was looking for something to bake on Christmas that was a little fancier than my standard cinnamon rolls. This was perfect. The dough is nice to work with and is very delicate and has fantastic flavor. The end result is very pretty- it's a shame we ate it before I thought to take a picture. A couple tips: Make sure to seal the seams very very well- it has a tendency to blow out. I couldn't find almond paste so I ran some sliced almonds and some butter in the food processor until it was smooth. I don't know if that is very authentic but it tasted great! If I could rate this a 4.5 I would for the following reasons: 1- The dough is very fattening with the heavy cream, 2- The cardamom makes this relatively expensive to make

Russian Pancakes - Blini

This was just ok tasting but not what I was looking for. All of the blini I've had were yeast risen (some had buckwheat some not). These didn't have the flavor- they were more like watery crepes.

Baked Rice Pudding

I must have done something wrong. I followed the recipe exactly but I ended up with a rice cereal that wasn't custardy or pudding-like. Maybe I used too long of a grain rice. I won't be trying this recipe again.

Colleen's Potato Crescent Rolls

I've started using this recipe whenever I need bread dough for anything except bread. I tried it first for crescent rolls and received much praise at Thanksgiving. I've since used this recipe with much success in cinnamon rolls and pizza dough as well. It is slightly sweet and extremely smooth.

BBQ Glazed Homemade Meatballs

This was delicious and a big hit. We will definitely be making this again. It was a bit too sweet. Next time I think I will leave a bit of the sugar out of the sauce and add some vinegar. It came out like candy- delicious but very rich.

Breakfast Kolaches

These were perfect! They taste just like the ones from my favorite kolache shop. The dough is the important part of this recipe- you can fill it with whatever you want. One note: The portions seemed wrong to me since they were so small. They aren't the dough is moist and rises a lot.

Carrot Pie

Based on other reviews, I made it with only 1/2 cup of sugar and it was perfect! It was still sweet, but not sickeningly so. Our 4 children (ages 10, 8, 7, 2) all loved it and begged for more. This worked well as a after-school treat, a dinner side, or a breakfast side. It had less than a tablespoon of sugar per slice, so I was happy to let my kiddos have seconds.

German Spaetzle Dumplings

Delicious. Just like the texture I remember from Germany but with more flavor. I used basil in place of the parsley because that's what I have. I used a colander and it was a phenomenal mess! Next time I'm going to do the plastic-bag-with-holes method another reviewer mentioned.

Microwave Oven Peanut Brittle

Chicken and Broccoli Braid

We replaced the mayo with sour cream and increased the onion. It was fantastic! The flavor was intense and tangy. The peppers were subtle. The kids loved it. I think this will be a staple.
