Mom's Chicken Cacciatore

Ok, maybe its cheating to rate a recipe when you make a lot of changes- but I really just used this recipe as a base. And it worked out great! Followed original except: I didn’t coat the chicken in flour, and I cut the chicken into small pieces. Cooked it in a non-stick skillet so omitted the oil. Used fresh tomatoes from the garden, added garlic powder, minced onion flakes, and red pepper flakes. Simmered it till it was pretty thickened and added orzo pasta. Turned out really yummy. Bell Peppers and Pasta

Good pasta dish. It's not my favorite pasta dish, but definitely tasty. It seemed to need a little something extra, so I the only change I made was to add red pepper flakes.

Corn and Black Bean Salad

This is so good. I can see how some might find the vinegar overwhelming but to me thats what I think a corn/bean salad should taste like. I used olive oil instead of vegetable oil, added (4)green onions, and omitted the sugar. It seemed like it needed some color and I was out of red pepper so I added a can of dark red kidney beans and it looks and tastes fantastic. Thanks for the wonderful recipe.

Blueberry Muffins I

I don't get it? Maybe I did something wrong, or just expected different than others but I followed the recipe EXACTLY and in my opinion they were strange. To be honest the consistency was more of a 'biscuit' than a muffin (super thick batter, and more ‘flaky’ than moist). They tasted alright, however definitely need more sugar as others suggested. Obviously others loved them so it must jut be a matter of taste. I just thought it was weird that they turned out like they did, was expecting much better.

Zucchini Casserole I

This is really good, but more of a side-dish than a 'casserole'. I guess I was expecting it to be more hearty. Its super tasty and fresh, very pleased with that. Followed recipe exact except substituted Italian breadcrumbs for the corn flakes.

Fresh Tomato Salsa

Super yummy! I'm so pleased with this recipe. I couldnt even find the peppers called for, used fresh jalepenos from my garden instead (only 2, wanted it kinda mild). I love cilantro so for me this it was the perfect amount. Also added a couple green onions and 2 cloves garlic. I used a food processor, blended more than diced. I just love it--It reminds me of the salsa I get in Mexican Town.

Banana Banana Bread

It was good. Maybe I didn’t mash some of the bananas enough though because it was a little soggy and mushy in the middle. As the name implies, it’s EXTREMELY Banana-y. Personally I prefer a more subtle banana bread. Probably won't make this particular recipe again.

Tofu Peanut Stir-Fry

Pleasantly surprised. Not really a big fan of peanut-y things so I was really pleased at how much I enjoyed it. Served it at a dinner party and it was a hit.

Easy Pizza Sauce I

Yummy! I omitted the nuts, used 3/4 c. olive oil and 1/4 c. applesauce. I like that its not too sweet. This one's a keeper!

Real Hummus

This was just ok. I made it twice, the first time I followed directions exactly and 4 tablespoons lemon juice (used fresh-squeezed) is way too much. It tasted more like a ‘lemon dip’ than anything else. The second time it tasted a lot better but still seems its lacking something. It is a good recipe though; it’s a matter of personal taste and tweaking it to your liking.

Jen's Fresh and Spicy Salsa

Not bad. I was pretty disappointed though. Think I would have prefered regular onions instead of the green onion-found them overpowering. Actually was a little bland, seemed like it was missing something.

Mexican Lasagna II

This is really yummy! I Substituted Morningstar Farms burger crumbles for the ground beef (we're vegetarian). I decreased the beans to one can. Used 1/2 red onion instead of green, 1/2 can diced tomato instead of fresh, some black olives, and 1/2 can green chilies. Reduced amount of cheese (didn’t have enough on hand). Turned out really tasty, although a little dry so I'll probably add sour cream or salsa as well next time.

T's Easy Chicken

This is a yummy dish. The sauce was alot more runny than I expected and it was a little bland for me. Although, the only change I made was add 1 clove of garlic, some coarsly ground fresh pepper & garlic salt. I thought it could use more mushrooms so I will definately add more next time.
