Baked Broccoli

Ok, I totally had to improvise since I was out of olive oil (i know, crazy). The cooking method is what impressed me, I rarely consider the oven when cooking veggies. It came great, really awesome, I will definitely use this recipe again...I may even follow it exactly when I have some olive oil.

Grandmother's Buttermilk Cornbread

This cornbread is fantastic! Don't change the recipe, don't change a thing. It is dense, moist, and just flat-out awesome! Good with barbecue, chili, soul food, and a great complement to coffee in the morning. I made it for Christmas and my family loved it.

Tangy Slow Cooker Pork Roast

I followed this recipe. My slow cooker is a bit large. In hindsight, I should have upped the seasoning and liquid a little, but that being said, the meat was pretty bland. It was soft in that it fell apart, but it wasn't tangy by any stretch. The used red onions, but the onions really didn't do anything for me, I didn't think it was the best flavor for the meat. I enjoyed making it, slow cooker recipes are always cool, but this one didn't work out for me.

Best Ever Brisket

Just finished serving this for Christmas dinner. Made it for the first time, wow, it was so great. The smoky flavor that comes from the chili powder of the dry rub is excellent. So tender. Once I sliced it, my wife poured some of the pan juices on the meat, and it was simply amazing. I highly recommend this!

Emily's Famous Hash Browns

I think I used too much potato... probably needed a little more flour, but the hash browns came great. the onion added an excellent flavor and they browned perfectly. i used safflower oil to fry them. fantastic. will definitely use this recipe for all my hash browns in the future... although i may add some pepper etc. as added flavor. fantastic!

Baked Salmon Fillets Dijon

used Honey Dijon mustard. I subbed in Panko bread crumbs that I seasoned. skipped the butter. the combo of mustard and the crusty coating of the bread crumbs was excellent. my wife and i loved it. its simple, and it complements the salmon wonderfully. would definitely use recipe again.

No Frying Eggplant Parmesan

The recipe is fantastic. I've used both regular and panko bread crumbs on different occasions. The fact that it was all baked instead of fried, made it so much less messy, plus a nice health bonus. if you've never made eggplant before (i hadn't) this is really an excellent recipe to try. peeling the eggplant is a bit tricky, the better your veggie peeler, the easier time you'll have.

Bold Vegan Chili

This is a good chili, but not great. After making this, I realize that I'm not a fan of celery in my chili. Also, I missed the crushed tomatoes of my usual chili recipe. I added cumin, a must have seasoning in any chili recipe for me. Next time, I would switch up the beans... just not use kidney beans exclusively. I made it un-vegan by using real sharp cheddar.

White Wine Chicken Soup

So Good!!! The parsnips really added a nice texture along with the carrots. The potatoes do get a little too soft, but in a totally awesome way. The wine makes it smell that much nicer in the kitchen. Excellent soup. Made it for my fiancee when see was feeling under the weather, and she felt great after eating it, its deceptively hearty. Wonderful.

Coconut Custard Pie II

i don't like coconut custard pie, but my family does and i made this for them. they loved it. one guest was calling dibs on the remainder of the pie after his first bite, so it was way better than the store bought shoprite brand that my family usually has. thanks for a great recipe.

Super Moist Pumpkin Bread

excellent. went over so well for thanksgiving. i subbed applesauce for the oil and coconut milk. i omitted the coconut flakes and walnuts. next time i think i'll add raisins, it seemed like it was missing that taste. really good, really easy, fantastic base recipe. will use again and again.

The Best Meatloaf

I used this recipe to make my first ever meatloaf. It was a total success. I didn't have steak sauce exactly, so I used some barbecue sauce with some Worcestershire sauce. My pan was a dual layer pan with small holes in the top pan to drain some of the fat from the meat. Awesome. I wonder what ground up tortilla chips would be in the mix instead of breadcrumbs???

Mushroom Pork Chops

I followed this recipe exactly and it was awesome. My fiancee and I loved this dish, it was tender and the mushroom sauce along with plenty of sauteed mushrooms was fantastic. i served this with some green beans and some roasted red potatoes. This is going to be a mainstay in my cooking rotation.

Cranberry Oatmeal Cookies

my brother made these cookies for Christmas. WOW! they are soft, moist, tasty, sweet, but not too sweet. Just amazing. I couldn't stop eating them, and once they were finished, we've all begun egging him on to make them again. Really tasty! Oh, and replace the butter with applesauce, i'm sure my brother did, he's healthy.

Bran Muffins II

These muffins are awesome. Used applesauce not shortening. Halved the salt. Whole wheat flour instead of white. Moist, full, but not heavy. So tasty!!! I've never made muffins before, but these came out so good, I'm going to be expanding my muffin making. Excellent, thanks for the recipe. Way better than some fatty version from DD.

Butternut Squash Soup with Sage

Honestly, this came out terrible for me. I'm not sure if the 1 inch cubes should have been smaller. I'm not sure if the cayenne pepper that dominated the taste was necessary. I have no idea. Only 1 person at my dinner liked it, and that person was not me. I hope this recipe comes better for anyone reading this, but I followed the recipe and it was not good. I'm sorry, I love cooking and most recipes I read on AllRecipes are good, but this one did not come out good at all.
