high school administrator. i value spending time with family and friends. one of my simple pleasures in life is to find new recipes and cook new dishes for my wife and i.
My favorite things to cook
really enjoy baking salmon, just so healthy and tasty. pan-fried steak and a sweat potato always nice too. chili was very fun, just a great way to sit around, maybe do some work or just talk to friends and family while the chili is cooking away. long cook times are a sign of quality for chili.
My favorite family cooking traditions
even though i've fallen off of this in recent years, the night before thanksgiving, my brother and i help my mom make the stuffing for the next day's meal. we will go through and methodically toast and dice 2 loaves of bread. there's a subtle science to dicing toast without crushing it.
My cooking triumphs
tomato cream chicken: this was the first recipe that required some grilling, baking, reducing of a sauce, blending, and boiling and it all turned out great. it was complicated and its something that i only read the recipe in order to make it.
My cooking tragedies
while pan frying a burger, the grease light on fire. very scary. once used a four cheese alfredo sauce for fettuccine alfredo, terrible just terrible...too many strong cheese flavors

Grandmother's Buttermilk Cornbread
This cornbread is fantastic! Don't change the recipe, don't change a thing. It is dense, moist, and just flat-out awesome! Good with barbecue, chili, soul food, and a great complement to coffee in the morning. I made it for Christmas and my family loved it.

Tangy Slow Cooker Pork Roast
I followed this recipe. My slow cooker is a bit large. In hindsight, I should have upped the seasoning and liquid a little, but that being said, the meat was pretty bland. It was soft in that it fell apart, but it wasn't tangy by any stretch. The used red onions, but the onions really didn't do anything for me, I didn't think it was the best flavor for the meat. I enjoyed making it, slow cooker recipes are always cool, but this one didn't work out for me.

Emily's Famous Hash Browns
I think I used too much potato... probably needed a little more flour, but the hash browns came great. the onion added an excellent flavor and they browned perfectly. i used safflower oil to fry them. fantastic. will definitely use this recipe for all my hash browns in the future... although i may add some pepper etc. as added flavor. fantastic!
