Roasted Vegetables

Fantastic! The perfect roasted vegetables. I serve these as a side dish with steaks and they always steal the show. Would be a meal on their own!

Simple White Cake

Mediterranean Stuffed Chicken

Yummy chicken dish! Made a few changes though. Used veggie cream cheese instead of plain, used fresh garlic and dill, lightly breaded chicken with italian bread crumbs before stuffing and then sprayed them with butter flavored cooking spray instead of using melted butter. Great basic recipe though. I'm sure you could play with the flavors (as I did) and still get a great result! One other note: I upped the temp to 400 degrees and baked for 25 minutes.

Cocktail Meatballs

Confession: I used only the sauce recipe and used frozen meatballs, yet these were some of the tastiest cocktail meatballs I've ever eaten/made! They were a hit at our holiday party as well as on New Years! Make these and you're sure to be sending home happy guests with the recipe!

Butter Snow Flakes

This recipe makes a dough that is perfect for using the cookie press. The only change I would make is to use more orange rind. I grated with a microplane and it was perfectly fine in the dough (no big chunks). I dusted the finished cookies with powdered sugar. Yum!

Chocolate Mint Brownies

The two toppings are great. Would use them on my own brownie recipe though. I might try making the chocolate topping with the new mint flavored chocolate chips next time to give this even more minty flavor.

Marbled Pumpkin Cheesecake

Not as good as I expected based on all the great reviews. I love cheesecake and I love pumpkin pie but there was something off in this combo. The crust was great though (very "snappy") and I'll likely use it again for pumpkin pie.

Caramel Popcorn Balls

Didn't use as much popcorn as noted by other reviewers... Caramel was super easy and delicious!!! Will definitely make it again for popcorn or as a sauce for apples, ice cream, etc. Yummy!

Peach Cobbler Dump Cake I

As a quick and easy recipe, this is great. It was a bit sweet for my taste, but that is a good think b/c then I can't eat too much! Next time I'll use three cans of peaches. Also, I used peaches in light syrup and about 2/3 of butter that this called for b/c I couldn't stomach using the whole stick! Wasn't dry at all--even with these adjustments.

Slow Cooker Beef Vegetable Soup

Really yummy! I did take suggestions and added a second packet of beef/onion soup mix. Didn't add water b/c I liked the "stewwy" consistency. Tastes even better on day two! Will make again--couldn't be easier!

Pumpkin Spice Cookie

I make a recipe similar to this one for muffins... The only difference that I add a 1/3 cup of water and bake them according to spice cake directions for cupcakes. They are delish and only 2 points according to weight watchers.

Slow Cooker Taco Soup

My husband and I really enjoyed this easy meal, but I did have to add a few things to give it enough flavor. I added a few cloves of minced garlic, a chicken boullion cube (I used turkey instead of beef), salt, and chili powder. Overall it turned out very well. Instead of adding all the extra spices, I would have just added an extra taco seasoning if I had one on hand.

Awesome Sausage, Apple and Cranberry Stuffing

I make this stuffing for Easter, Thanksgiving and Christmas and there are never any leftovers! I don't use the liver or stuff it in the bird. Instead I bake it at 350 for 35 minutes, fluffing it with a fork a few times to ensure that it gets evenly baked. After trying this stuffing, we'll never try another recipe again!

Tantalizingly Tangy Meatloaf

This fabulous meatloaf was easy as well! I doubled the recipe and in doing so added an additional 1/3 c. ketchup (1 c. total) to the sauce because I like my meatloaf saucy! I also couldn't find pineapple preserves, but used apricot-pineapple and got a great result. I had italian breadcrumbs on hand and used them in place of the plain. I will make this again and again!!! Served over mashed onion potatos, delish!!!
