Double Layer Pumpkin Cheesecake
I made this per request of my husband who LOVES pumpkin pie. Took it to a potluck, where it won rave reviews and someone took quite a bit of the leftovers home (We had a small turnout!) Anyway, I'm not as into pumpkin as my husband, but even I thought it was an excellent recipe. I did follow some of the others' advice and added extra cinnamon and nutmeg. Thank you for sharing your special recipe!!!!!!

Kalua Pig in a Slow Cooker
I've been making this for a year now - take it to potlucks, family gatherings, etc and always get asked for the recipe. Like other reviewers, I add water or chicken broth for cooking. Leftovers are awesome - roll them in tortillas and bake for quick taquitos!

Ceviche
I really liked this recipe. I've had a couple different varieties and this is a super recipe which was perfect for a warm summer evening - not too heavy, but excellent! Didn't have bell peppers, so I used poblanos finely chopped and a small amount of jalapeno for the heat. Didn't think I'd like celery, since I hadn't had it that way before, but it was a nice fresh flavor in this dish. I did add chunks of avocado as a friend from Mexico suggested it. Really, this is simple and delicious! Makes me want to have family over to share!
