I did not add the clams or mussels (can only afford so much seafood on a 2-student budget) but did everything else as listed. It was WONDERFUL! Served over couscous, this dish is a wnderful addition to our dinner table.

Homemade Mac and Cheese

Rave reviews at my house. Can only give 4 stars though as I followed someone else's tips on reducing milk to 1/2C. Adding 2C evapo. milk and 1/2C sour cream. I decided to double the recipe so that we would have leftovers the next day. I put half the mix in one casserole dish and the other in another dish. Baked one and stored the other un-baked one in the fridge to be put in the oven 1/2 hour before dinner the next day. Do not worry that the sauce seems runny when you add it to the noodles. It thickens up A LOT! Right after the cheese melts add it to the noodles and you're in business.

Slow Cooker Macaroni and Cheese I

I read on another site that this recipe should have COOKED macaroni added at the beginning - not uncooked. It's worth a shot (though sort of takes away from the ease of slow cooking..)

Wicked Garlic Tofu Saute

This is a favorite stir-fry of our house. I used some frozen tofu that I had already drained and cubed and it made the recipe that much faster. I minced the garlic as others suggested and the scents were mouthwatering. I forgot to add the second half of the oyster sauce to the veggies so I dabbled a bit in when I added the tofu and it seemed to work fine.

Taco Seasoning I

I make a big batch of this and put it in a jar on my spice rack. I don't even measure it out - just shake a little bit in and go by taste. We use it with veggie crumbles and the tacos are out of this world!

Peanut Butter Cup Ice Cream

This recipe was awesome. I can only give it four stars though because we altered it slightly. First, my kitcheaid ice cream maker attachment makes 2 quarts so we doubled this recipe - VERY good idea! Second, we used crunchy peanut butter instead of smooth - again, a VERY good idea. Third, we didn't add peanut butter cups. The peanuts from the crunchy pb added enough variety.

Orzo with Parmesan and Basil

I make this for lunch about every other week. I LOVE IT! I've also made it for potlucks and just double (or triple) the recipe to feed a crowd. When basil is not in season I just use a teaspoon or so of dried basil. Tastes great - though fresh is the preference over here. - Oh and it holds up great the next day. Just zap it for a little bit in the microwave (not too long or else it gets oily) and enjoy. I also omit the salt and sometimes use a dash of pepper.

Mediterranean Potato Salad

Everytime I make this people ask me for the recipe. Soemtimes I include the cucumber and sometimes I don't - depends on if I have a good one lying around. You can use either a prepared italian dressing or whip up one of your own with what you have on hand - this is what I typically do because we don't usually keep dressing in the fridge. Again - GREAT recipe for get togethers with friends.

Bread Pudding I

I did cook this in a water bath so that I could get the custardy-texture. I put the mixture in a 2qt round baking dish and then set that inside of a 3qt rectangular baking dish filled with water. The hubbie and I LOVED it. I used golden raisons from the natural foods aisle and they didn't need any softening. I also prepared a vanilla sauce with a little bit of Meyers Rum in it to serve along with the bread pudding. FABulous!

Delicious Mushroom Soup

I've made this soup twice now and I will say I prefer NOT blending any of the soup- we like chunks of veggies - not pureed veggies! Also, when I blended, I only blended half of the mixture so that there still were some chunks. Instead of just carrot OR celery stalk I used both - and 2 of each since we love veggies in our house. I also use orzo instead of rice and added 1T of hot red pepper sauce (rooster) when I added the soy sauce. Not TOO many changes but enough to make it a family favorite.
