Okra and Tomatoes

I thought this was very good - I had to add several seasonings to make it just right, or I would have given it 5 stars. I added fresh parsely, garlic, pepper, seasoned salt and a pinch of chili powder. However, I will definitely be making this again. I served it over brown rice with a fried egg, and it was delicious. Thanks for the recipe!

Italian Wedding Soup I

This is not what I was hoping for. Very bland, and if you cook according to directions, the escarole becomes slimy mush. I don't even want to try to make it better.

Smushed Apples and Sweet Potatoes

We really liked this and will make again. I baked the potatoes in a microwave and scooped the flesh to save time. I wanted a smooth puree so I used the milk (well, soymilk) and pureed with a hand-blender. I used brown sugar because it's more flavorful and a golden delicious apple because it's what I had. I think the Granny Smith might be better for flavor.

Super-Delicious Zuppa Toscana

I followed another user's suggestion to replace the cream with milk and a tablespoon of cornstarch, because they don't make lactose-free heavy cream. It is some of the best soup I've ever had, I will make it again and again. Also used kale.

Roasted Red Pepper and Tomato Soup

Wow. I mean, really. Wow. I used canned tomatoes, because they're cheaper (usually), and fresh cracked black pepper to season. Fantastic recipe, and so healthy! Next time, I'm going to roast a head of garlic and try adding that as a variation. Thanks so much for the recipe.

Roasted Turkey Legs

The recommended cooking time is WAY too long. They came out really dry, even with my oven thermometer showing the right temp. The second time, I shortened the cooking period, and they were much better, but we didn't love them.

Sweet, Sticky and Spicy Chicken

Really good! Even my picky husband liked it. I cut the hot sauce to 1T and floured the chicken first. Had to add some broth because the flour thickened it too much. Pretty quick, too. Definitely a keeper recipe.

Creamy Chocolate Pudding

I thought it was awfully cornstarchy. I had to add extra sugar and some skim milk to make it better, and even then I didn't really like it. I prefer Jello brand, even the instant 5-minute kind, over this.

Lower Fat Fudge Brownies

Maybe others' expectations are too high...this is a fantastic diet brownie recipe. I would like these even if I weren't watching what I eat. Very chocolatey, very fudgy, very satisfying. Definitely better than anything Snackwell's makes! I used nonfat sugar free vanilla yogurt and added some chopped walnuts. I did use real sugar and eggs - no Splenda or egg beaters here (don't think the texture would be right). Thanks Emily!

Lamb Chops with Balsamic Reduction

The lamb turned out wonderfully tender and very flavorful with the herbs. The balsamic reduction came out as described but we didn't care for it - it was okay when the chops were dipped in at the end, but I definitely wouldn't use it as a sauce - too overpowering for the flavor of the lamb. I did save the sauce to try over steamed carrots and found it much more pleasing.

Stuffed Mushrooms with Spinach

GREAT results, but I had to make some changes to lower the fat content. I cut it in half (there are only two of us), subbed in 1 tbs. neufchatel + 2Tbs. fat free half and half for the cream, and cooked the onion & garlic in chicken broth. I didn't use any butter but sprayed the pan and the stuffed mushrooms with butter oil spray. It came out FANTASTIC, and I'm sure that the original would be even better, it's just too high in fat for us. Thanks Gail!

Great-Grandmother Steinbeck's Johnnycake (Cornbread)

Phenomenal. Best cornbread ever. I used safflower oil, yellow cornmeal, and half the sugar - baked in a hot cast iron skillet. The "buttermilk" I must use is just 1 cup lactose-free milk + 1 Tbs white vinegar. I also added about a cup of corn kernels. It went really fast.

BAKER'S® ONE BOWL Coconut Macaroons

These aren't the best macaroons I've ever had, awfully chewy, but it may be because I had to use powdered egg whites instead of regular ones. Also I didn't have almond extract so I used orange; it was a great flavor. I used sweetened coconut because it was on hand, but should have reduced the sugar; they were a tad too sweet. Any way about it, they got snarfed by the locals!
