Nutty Zucchini Bread

I really enjoyed this and it was easy to make. Instead of baking in a loaf pan, I used a muffin tin and baked for 20-25 minutes. It worked so well and will eliminate the mess of slicing bread, plus I can freeze individual portions. This recipe made 16 regular sized muffins. I added some chocolate chips to some of the muffins before baking, as well. This is probably the only recipe I'll use.

Baked Spaghetti Squash with Beef and Veggies

Great idea--I often prepare spaghetti squash with meat sauce and vegetables, but I never thought to bake it as a cassorole. I used tomato sauce instead of diced tomatoes and sprinkled about a cup of cheese on top (to reduce amount) instead of stirring it in. I also added spicy seasonings and chipotle peppers, per my preference. Don't over-cook squash or it will become mushy...as long as it comes out easily in strands with a fork, its done.

Spicy Soup

I didn't bother with the cream and I added 2 small chopped sweet potatoes and some spicy peanut dressing, and dropped the cauliflower. The added sweet potatoes recieved compliments. Be careful not to cook the broccoli too long, as it will get mushy (still good though)

Black Bean Pinwheels

I used refried black beans rather than mashing them myself. The salsa makes them a little watery...I used diced chipotle peppers instead. Very good. Chill well before trying to slice.

Mexi Tatoes

I used salsa instead of tomatoes, and finely diced chipotle peppers in adobo instead of chili paste. I baked it for about 25 minutes. It was very good. Next time I will stir in a dollop or two of sour cream before baking to make it more creamy.

This was good but if using salsa, use a thicker type or drain some of the liquid. I also spread chipotle pepper paste on top for more spice.

Spinach and Spaghetti Squash Quiche

I really enjoyed this. I added some dried onion and garlic powder. Next time I will added minced garlic and some hot sauce or cayenne pepper. I will be making this often. It is also delicious topped with salsa

Award Winning Soft Chocolate Chip Cookies

I made a 1/2 recipe with chocolate pudding mix for my boyfriend who was returning from Europe. He loved how soft they were. I went out of state for 4 days and when I returned, they were gone. I did add some salt and a little extra vanilla.

Chocolate Chip Cheese Ball

I did use lowfat cream cheese and a little extra powdered sugar. I froze it in a bowl for 2 hours and shaped it into a ball. Using the plastic wrap to hold it, I coated it in crushed chocolate graham crackers crumbs. The reaction was mixed, but it did get finished that night. People seemed to like it more with the (thick) pretzel sticks, as opposed to the chocolate graham crackers. I may make it again.

Basic Microwave Risotto

I used beef broth and red wine. It was delicious. I had to cook a few minutes longer, but it would have probably thickened on its own had I left it sit. Will prepare again!
