Great idea--I often prepare spaghetti squash with meat sauce and vegetables, but I never thought to bake it as a cassorole. I used tomato sauce instead of diced tomatoes and sprinkled about a cup of cheese on top (to reduce amount) instead of stirring it in. I also added spicy seasonings and chipotle peppers, per my preference. Don't over-cook squash or it will become mushy...as long as it comes out easily in strands with a fork, its done.
