Pam's BBQ Flat Jacks

Reviewed: Aug. 24, 2005
Very easy to make and tasty! My very picky husband enjoyed this very much. I didn't add the Tabasco sauce because I didn't have any, but we're not huge fans of hot sauce anyways.

Baked Chicken with Peaches

Reviewed: Feb. 23, 2006
Very good! I substituted some of the spices for what I had in my pantry (allspice, nutmeg and whole cloves) and marinated the chicken in the whole mixture for a few hours before cooking. It was so unbelivably moist and tasty after doing that...I highly recommend. Next time, I'll make the sauce to top it for extra flavor. Canned peaches did the trick nicely and took on some of the spices for a nice change.

Greek Pasta with Tomatoes and White Beans

Reviewed: Feb. 23, 2006
Excellent dish! I make this at least once a month and it's a great way to get spinach and beans in both my husband (over 30) and toddler!

Apple Matzo Kugel

Reviewed: Dec. 10, 2007
Excellent! So easy to make and tasted awesome! I did substitute 1/4 cup of applesauce for the oil (I try to cook using less fat) and gave the top of the kugel a dusting of cinnamon before putting it in the oven. Will definitely make again and forward on! Thanks!!!

Creamy Cheesy Grits

Reviewed: May 4, 2008
Excellent!! I served this at our first annual Derby party and self proclaimed "grits haters" ate this up and then went back for seconds (and thirds). SO easy to make and delicious!

Kentucky Hot Brown

Reviewed: May 4, 2008
Awesome! I did the casserole version because we were serving a larger crowd for a Derby party. Tore the toast into small pieces, layered it with tomatoes turkey and crumbled turkey bacon (skipped the mushrooms b/c I'm allergic) and then the cheese sauce. Won wave reviews at the party and is definitely a repeat menu item on Derby Day! I should add that we lived in KY for four years and always thought that Hot Browns were awful. This recipe totally changed our minds.

Run For The Roses Pie I

Reviewed: May 4, 2008
Good taste, but I couldn't get it to be a little more solid even after cooking it a full 1/2 hour longer than suggested and decreasing the quantity of chips as recommended. Maybe I'll try refrigerating it before serving to firm it up, but overall it was received well at our Derby Party. Very rich...could have done with a scoop of vanilla ice cream to cut the richness.

Peach Bread

Reviewed: Aug. 18, 2009
Using some other reviewers suggestions, I used fresh peaches (I had just picked a lot of them) and this recipe was great! I used 1/2 cup oil and 1/2 cup peach puree instead of the 1 cup of oil to cut down on calories/fat, cut the sugar down to 1 cup (my peaches were very ripe and sweet) and subbed one tsp of allspice for one of the tsps of cinnamon. Great texture and taste. Super easy! Will make again and again.
