Chantal's New York Cheesecake

The recipe was solid, but it turned out too cakey for my tastes. Also, to prevent splitting, I greased the sides of the pan and stuck strips of parchment paper along the sides. They were wrinkled by the time the cake was all done, but they didn't take away from the appearance at all, and they peeled right off -- no splits!
