Oatmeal Pancakes II

This is my new go-to pancake recipe. I find I need to add a little extra flour and oats or they are a little thin. I like them fluffy and thick. Also, since we eat them plain, I add a little extra sugar and they are a great to-go breakfast.

Aunt Jewel's Chicken Dressing Casserole

I love this recipe and have been making it for years! I love stuffing so always double that. Not sure this is "southern," as I'm from the midwest but it is definitely yummy comfort food!

Upside Down (Maqluba)

I am so happy I found this recipe! My Jordanian mother in law makes this (and all sorts of variations...uses chicken and cauliflower only, sometimes lamb). She tried to tell me how to make it (sounds exactly like this) but had no idea the amounts. I can't wait to make this - it is yummy! I especially like when you just use chicken and cauliflower since I'm not a lamb fan.

White Bean, Spinach, and Barley Stew

One word: Mmmmmm. Only changes were used pinto beans instead of white, and roasted the garlic in the oven instead of frying. Mmmmm. Mmmmm. Mmmmm. I am going to make lots of this and freeze it for my lunches now on Fridays during lent!

Pineapple Cranberry Chicken

Made as written but added 1 tsp. allspice, 2 cloves minced garlic and some chopped onion. Next time will try adding a touch of cardemon too.

Indian Stir-Fried Shrimp in Cream Sauce (Bhagari Jhinga)

I took some liberty with this but it came out awesome. First, I didn't use shrimp, I used chicken. I didn't have mustard seeds so I used a tsp. of regular mustard. Also didn't have tomato paste so I used 1 Tbsp. ketchup and cut the sugar and salt in half. Decreased oil to 1 Tbsp. Didn't have cilantro or the jalepeno, left them out. Also added a little tumeric and a tiny bit of thyme to the spices. I also used a very liberal hand with the other spices. Didn't need the cornstarch. Served over rice and lentils and I and my fiance loved it! Also added a half a bag of frozen green and red peppers and onions to add a veggie factor.

Grape Leaves Aleppo

I made these for my boyfriend the other day...my first attempt at making one of his favorite middle eastern foods (he is Jordanian). He said that they tasted just like the ones his mom makes. In my book, this recipe garners all 5 stars! Thanks Robert!
