Banana Banana Bread

Reviewed: May 1, 2011
This is my go to banana bread recipe. It is now a staple in my house. I always keep a loaf out and a loaf in my freezer. The one thing you have to be careful of is to have your bananas completely mashed, otherwise you will end up with soggy banana bread.

Sweet Potato and Apple Soup

Reviewed: Feb. 28, 2011
I liked this soup. I left out the carrots and lemon because I didn't have any, but I think the carrots would have helped with the flavor. I'll try it without the cream next time to cut the calories.

Corrigan's Minestrone

Reviewed: Feb. 28, 2011
This was a great soup with a couple of modifications. The tomato paste was way too strong for my taste so I discarded about a cup of the liquid and added extra stock. I used chicken stock instead of vegetable and left out the kidney beans. I took the advice of other reviewers and cooked the noodles separately and added to soup just before serving. A great soup!

Sweet Potato Rolls

Excellent recipe! They were delicious! I love that I am able to sneak some vegetables in through the sweet potato and my husband doesn't even know it!

Mango-licious Tilapia

Reviewed: Feb. 20, 2011
This was my first time making fish. The salsa was excellent. My husband refuses to eat seafood and he ate the salsa and most of the fish. I gave it 4 stars because I felt there should have been a little more flavor in the fish. I marinated it for a couple hours per another reviewer's suggestion and followed the recipe but it still seemed a little bland. But then again, it was my first time making fish...

Angela's Easy Breaded Chicken

Reviewed: Jun. 9, 2010
Very easy excellent recipe! My husband normally hates frozen chicken breasts, but he absolutely loved it! I made my own dressing out of white balsalmic vinegar and olive oil, with italian spices. I also made the chicken in a cast iron pan to speed up the cooking time. Will definitely be making again!

Easy Devonshire Cream

Reviewed: Mar. 15, 2010
Perfect cream for my scones! It was definitely a hit with my mother in law! I really liked that the cream has lasted several days in my refrigerator, so you would be able to make the night before. Very tasty! Serve with Perfect Lemon Curd for an extra special treat with scones!

Perfect Lemon Curd

Reviewed: Mar. 15, 2010
Excellent Lemon curd! I did end up with a couple little pieces of egg, but no one else would have ever noticed. My advice is to keep the heat as low as you can and never stop mixing.

Grandma Johnson's Scones

Reviewed: Mar. 15, 2010
Absolutely fantastic! I followed the recipe exactly, with the exception that I did not put in the raisins. I just split up the dough into four equal parts and added my own flavorings. I made one part with orange zest and craisins. The second was grated apple, all spice, cloves, nutmeg, and cinnamon. The third was fresh blueberry and lemon zest. The last was grated carrot and raisin with spices. Way to go grandma Johnson!! 10 stars!

Snickerdoodles IV

Reviewed: Mar. 11, 2010
These cookies did not work out for me. I made the recipe exactly the way it stated. The cookies tasted like shortening and cracked and bubbled around, but were still uncooked in the middle. Will not make again.

Honey Glazed Carrots

Reviewed: Jan. 17, 2010
The flavors do not meld together very well. It is too many things going on at once. My husband would not eat and normally he isn't that picky. I will not make again.

Cream of Broccoli Soup III

Reviewed: Jan. 15, 2010
Excellent Soup! I told my husband what I was making and he looked very disappointed, but as soon as he tasted it he told me to make it again! I did add one scoop of cottage cheese to help thicken the soup. I also added some corn starch to the milk. I noticed after dinner that the soup in the pot was extremely thick, so it would have also helped to let it sit a little longer. I also added some celery salt, parsley, and garlic salt to give a little more flavor.

Italian Restaurant-Style Salad Dressing II

Reviewed: Jan. 12, 2010
Very, Very, good! I did change the white wine vinegar to white balsalmic vinegar, and I used 1 Tablespoon Simple Sugar Syrup instead of the corn syrup. I didn't have any Romano cheese, so I just added a little extra Parmesan. For the seasoning, I used garlic powder, garlic salt, basil, oregano, and rosemary. Turned out exactly how I wanted!
