Vegetarian Tortilla Soup

My whole hard-to-please, meat-eating family loved this! The avocado on top was definitely a good touch, we had chips and salsa with it but I think cornbread would be yummy as well. Thanks for this great recipe!

Cornmeal Waffles

I agree that some kind of fat could have been added, or applesauce- will probably do that next time I make these. It would have made them just a little more gooey. They were very good with fruit though, my whole family loved them.

Peppermint Meringues

They were kind of weird and styrofoamy, but once you got past the texture, they were pretty good. I like the peppermint addition, it gave them some added flavor and my boyfriend loved it. Next time I will experiment with other additions as well, different types of chopped up candy might be good. :)

Banana Muffins I

They were very small and did not rise much, as many have already mentioned, but I really liked that they were very low in fat and calories. I used splenda to make them even more so, and they were almost completely guilt-free. :) They had a nice banana taste- and it was a great way to get rid of those overripe bananas sitting around!!

Choco-Chip Cookies

My brother loved these, but I thought they were a bit spongey. For some reason I find most low cal cookies do come out that way, but they were definately one of the better sugar substitute recipes I have tried. For some reason it also made much more than 36 cookies and I made them average sized.

Melt-in-your Mouth Shortbread Cookies

Very good, I did the marbled variation, and the combination was delicious. They also looked very pretty and unusual because of the white/chocolate mix, I gave them out in a mix of cookies for holiday presents and everyone loved them. :)

Three Pepper Pasta Salad

Very good, although I omitted the olives and served cold. The dressing was very light and delicious- however it seemed to need more or a binding agent to the pasta. Next time I will add more parmesian cheese, which would hopefully do the trick. Definately going to use this recipe again!
