Gingerbread Cookies

This was sort of a hit and miss--depending on the tastes of the reviewer! My mother wasn't fond of the flavor, but my husband, who doesn't like sweets, gobbled these down. The cookie was less of a cookie and more of a cracker in some ways--subtle flavors, not sweet. We chose not to go with the chocolate pre-bought frosting, though, and made powdered sugar chocolate frosting, instead. Still, chocolate didn't seem like the best add-on, so we went with the white powdered sugar frosting instead--it added the extra sweet that was missing. Loved the simple circle shape for these, though. Easy to decorate & a filling snack cookie--not too shameful to hand off to my toddler for a treat. Just don't expect sweet!

Kickin' Asian Chicken Salad

I would preheat & get those potatoes & beets in right away, then make the wasabi dressing next time b/c of the lengthy cook time; and the dressing probably doesn't need to sit in the blender for an hour. I used leftover chicken off of a rotisserie chicken--just the white meat--weighing it on a scale until I had the 3/4# and it worked out great. Even my 2 year old appreciated the potatoes, beets & chicken (though he's still not keen on greens). Submitted a photo--you'll need a BIG salad bowl to toss all together without a mess. Bottom line? Worth the time! Delish.

Fish in Foil

I adjusted the recipe for 6 filets, which meant 2T of garlic salt--and that was clearly TOO MUCH! Also, because I used jarred jalapenos there was too strong of a jalapeno flavor, too (& my husband loves hot stuff!), because of the peppers containing more liquid, which got into the fish too much. If I try it again I'll use half as much garlic salt, and add garlic powder & use fresh jalapenos (as the recipe states).

Angel's Yummy Bruschetta

I think olive oil is a missing ingredient here--I drizzled it on before adding the cheese. Also, shredded parmesan is our personal preference with bruschetta to mozzerella. More traditional for a bruschetta. Otherwise, this is the only recipe for bruschetta I've found with all the ingredients of my memory: garlic, onion, basil & oregano--not just tomatoes & cheese. Thanks!!
