Grilled Cheese Sandwich

How can a grilled cheese sandwich NOT get 5 stars?! I loved to read all of the comments. So I had to add my variation that I did not see anyone suggest. Back in the late 80's, when I was in high school, my friends aunt was doing Weight Watchers. They told her to, instead of using butter on the outside of the bread, apply a thin layer of mayo. It grills up great, adds a little extra flavor, and is less fattening than the butter. It spreads thinner so you hardly use any but still have something to give you a crispy crunch. I also add mustard to the inside. Yum! All 3 of my kids love it this way. Great post!

Slow-Cooker Chicken Tortilla Soup

My kids absolutely loved this! My 10 year old, who does not like another version that I make, gave this 5 stars. My picky 5 year old said he would give it 10 stars! I pretty much followed the recipe with the exception (and only because I didn't have them) of the tomatoes. I added a large can of crushed tomatoes. I also added, at the suggestion of my kids, a large can of whole pinto beans. They loved it. I gave them tortilla chips which they used as a scoop for all of the great stuff in here. For myself, to cut down on the calories and fat, I tore a corn tortilla into pieces and put those into the soup. Yumm!! It tasted so authentic. Thanks for the post!

Beef Tenderloin with Horseradish-and-Roasted Garlic Crust

Oh, WOW! This was absolutely fabulous!! I got nothing but compliments on Christmas Eve with this dish. They couldnt believe that so few ingredients could produce such outstanding flavor. For those who thought that this dish didn't have enough flavor, did you use any seasoning, like salt? I used some sea salt with it and followed the recipe exactly. I did have to cook it longer than the recipe said...about 40 minutes longer but my tenderloin was bigger so I expected that. It was well worth the wait!

Julia's Best Ever Chocolate Chip Cookies In A Jar

This recipe won first place in our county fair. My son submitted it and it won! We increased the flour by 1/4 cup (to make 2 cups of flour total). We used two eggs (how does one get a half of an egg??)and we used a layer of white chips and swirled choc/white chips. It all fits in the jar if you pack it in well. We will be making these for Christmas gifts this year.

Black Bean and Couscous Salad

Can you say "YUMM-Y?" This was delicious! It was light and refreshing and so quick to make. It probably took about 15 minutes to make. I just chopped everything while the broth was heating up and the couscous was sitting. It was great to make between coming home from school and then off to soccer practice. I did double the dressing and cut back on the olive oil a bit and it was perfect. Keep the great recipes coming!
