Connie's Zucchini "Crab" Cakes

These tasted very good! the zucchini DEFINITELY needs to be drained first! i am SO glad i read the reviews that suggested to do that! I shredded them and salted them and put them in a colander for about an hour and then pressed with a wooden spoon...got almost a CUP of water! I fried half of them and baked the other half. we definitely preferred the baked ones. will for sure make again though!

Delicious Ham and Potato Soup

Absolutely delicious! the best potato soup i have ever made! i like to add carrots and i mash the potatoes with a potato masher to make it a little creamier.

No Bake Peanut Butter Pie

VERY easy! My five year old did a lot of the work. He chose an Oreo crust and then we topped it with Oreo crumbles. Everyone loved it!

These were absolutely delicious! I followed the directions exactly except i did add a little more hot sauce because we like that little extra kick. I will definitely be making these frequently this summer. Thanks so much for the wonderful recipe!

Words really do not describe how delicous these are! I even used fat free ranch and everyone LOVED them! My father, who claims to HATE ranch dressing, raved about them. Absolutely delicious! a definite keeper!

Chicken and Apple Curry

This was sooooo good! I did make a couple minor changes though. (i had a hungry 4 year old and needed it to be done faster!) I first cut up the chicken breasts (4 of them) and sauted them in olive oil and then reserved them on a plate tented with tin foil. Then i cooked the onion and apple as said in the recipes and made the sauce and added the chicken at the very end to re-heat it. I topped it with some chopped cashews and it was GREAT!!

Mocha Chocolate Chip Banana Muffins

These muffins are soooo good! The first time i made them I couldnt really taste the coffee so i suggest doubling the amount as i do now. I have also made them without the chocolate chips to make them a bit healthier and i love them that way as well (although i do realize they arent really "mocha" anymore). These are excellent!

Coconut Cream Pie VI

This is VERY sweet! Still good, but a little too sweet for my taste. Next time i will cut down on the vanilla and add a little more coconut. I also toasted some coconut and sprinkled it on top for a little more coconut flavor. I will definitely use this recipe again, just without so much vanilla

Hot Artichoke and Spinach Dip II

Absolutely delicious! I made this as an appetizer for Thanksgiving and everyone raved about it! They said its better than a restaurant! I substituted sour cream for the mayo and mixed the mozzarella into the mixture instead of on top. SOOOOOO GOOD!!!
