Borscht with Meat

No need to precook the beets. Shred them and cook directly in the meat stock. Also, leave out the bacon to make it lower in fat. I aaded somne vegetable stock to make the stock richer in flavor.

great flavor-be careful not to overcook te vegetables. the vegetables are best just a bit crisp. Add spinach just before serving up the dish.

I used pregrated unsweetened coconut that you buy at any store. The recipe is a little dry, but flavor delicious. I think the flavor would be enhanced if 1/2 cup coconut milk or fish/chicken stock was added.
