French Toast I

Reviewed: Nov. 19, 2005
Great, classic french toast. I added all of the spices as suggested and enjoyed the taste, although I would probably use less nutmeg next time. I used the rest of a loaf of french bread that we had bought the night before, so that made it extra tastey. I also followed another reviewer's suggestion and covered the pan with a lid so the middle would also cook.

Apple Pie by Grandma Ople

Reviewed: Nov. 19, 2005
Delicious, I loved how gooey this pie filling is! I did cheat and used store bought pie dough for the crust. I read a lot of the reviews and made many of the suggestions listed: I brushed bottom of crust with egg whites to keep it from getting soggy, added a tsp. of cinnamon, dash of nutmeg, and tbs. of vanilla to the syrup (and took out a tbs. of the water to make up for adding the vanilla), poured the syrup over the apples before putting the lattice crust on, and baked on the bottom rack of the oven to keep the crust from getting too brown. I also ended up cooking it a little longer because when I stabbed the apples in the center with a knife they were still a little crispy. You will love this apple pie!

Pecan Pie V

Reviewed: Oct. 17, 2005
Delicious! I was so happy that my first ever pecan pie came out great thanks to this recipe. As another reviewer said, I got a little confused about the oven temp (pre-heated it to 350 but it says to cook it at 400 for the first ten minutes), so I don't know if my oven temp was perfect, but the pie still came out great! Just preheat your oven to 400 and then turn it down to 350 after 10 minutes of baking. I highly recommend this recipe.

Fluffy French Toast

Reviewed: Oct. 29, 2005
This was good, but not the greatest french toast I've ever had. It appealed to me because many reviewers said it was not soggy, but I found it a little too dry. Perhaps because I used a denser bread (challah bread) with pretty thick slices? Overall good taste, it just didn't wow me.

Strawberry Cinnamon Oatmeal Muffins

Reviewed: Feb. 18, 2006
Very tasty! They were defintely not super sweet (I tend to like muffins sweeter...), but that may also be because my strawberries weren't very sweet. But the flavor was good and they were very easy to make. I filled the muffin cups almost to the top and was nervous they would rise too high, so I didn't quite use all of the batter. However, they did not rise much higher than they started, so feel free to fill the cups to the top. Mine baked perfectly in 18 minutes.

Pasta, Broccoli and Chicken

Reviewed: Nov. 19, 2005
So tastey!! We loved this pasta!! I cubed the chicken before cooking it, and then I cooked it in a frying pan with a little olive oil, lemon juice, and garlic powder which gave the chicken a nice flavor. I suggest starting the boiling water right away like the recipe says. I waited a little while and forgot how long it does take for water to boil, and then you can time it so the pasta is done at the same time as the sauce. I followed other reviewers' suggestions and added a third tablespoon of pesto and that seemed like a great amount. We love tomatoes so next time I would add more. GREAT recipe!

Split Pea and Sausage Soup

Reviewed: Nov. 19, 2005
This soup had great flavor, but (I don't know what I did wrong...) I could not get a good consistency. I followed the recipe as directed and got the last instruction that said "simmer until peas are soft but NOT mushy." I had never made split pea soup before, so I did not expect that it would take 2 HOURS for the peas to get soft. The liquid kept evaporating so I added more water periodically (make sure you cover with a lid), but I was never quite sure what the "soft but not mushy" consistency was supposed to be. When I have eaten split pea soup before it was very smooth, but was this supposed to be a little chunky? I cooked until I thought the peas were done but was very frustrated by the unexpected length of time it took (we ate a late dinner last night). The taste was enjoyable and we liked the kielbasa sausage flavor, but we did not like the consistency of the soup. Perhaps I did something wrong, but I wanted to write this in case anyone else comes across this problem.

Cream Puffs

Reviewed: Mar. 19, 2006
Delicious! This was a fun recipe -- I had never made cream puffs before. I followed a lot of reviewers' suggestions. I added 1/2 tsp. vanilla to the pudding mix, used white chocolate pudding, an put the pudding mixture into a ziplock bag to mix (less dishes to wash and then cut off a small corner to use as a pastry bag). For the puff shells, I added 1 tbsp. sugar and 1 tsp. vanilla, let the dough micture cool for about 10 minutes before adding the eggs and mixing in my stand mixer, and then made the dough balls on the baking sheet small (quarter sized). I baked them at 425 degrees for 10 mins., then at 375 degrees for 15 minutes, and then I turned off the oven and cracked the door and let them sit for 5-10 minutes. Thanks for all the great suggestions and a great recipe, they came out perfectly!

Grandma's Gravy Recipe

Reviewed: Nov. 27, 2005
I had never made gravy before, and I would not be cooking a piece of meat the use the fat from that, so this seemed like the best alternative for an inexperienced gravy maker. However, we thought the bouillon made the gravy taste like chicken top ramen. Other reviewers used beef bouillon; maybe that's the way to go?

Fruit Salad in Seconds

Reviewed: Apr. 29, 2006
Delicious and simple! I used apples instead of bananas and cut all the fruit the night before. Then the morning of the brunch I stirred in the yogurt. Delicious, especially with granola!

Pumpkin Chili Mexicana

Reviewed: Oct. 25, 2005
We loved this chili -- very hearty! I also loved the extra healthiness the pumpkin provided, and I think that made the food taste even better in my mind (an added benefit to all already great tasting chili). As other reviewers said, you don't even taste the pumpkin, but I think it adds a nice texture and thickness to the chili. **Added note: I made this again and made it a little healthier the second time around by using olive oil instead of vegetable oil, and using "no salt added" canned products where I could (tomatoes, corn).

Cheese Herb Bread

Reviewed: Sep. 16, 2006
Delicious! This was the best bread I've made yet. Definitely need to use less yeast, though, it did reach the top of my machine and then cave in. I used fresh herbs from my garden.

Chicken-and-Pasta Bake with Basil

Reviewed: Feb. 26, 2006
Delicious! Great subtle flavor, and the cheese sauce is rich without being too heavy. Another reviewer said they did not like the broccoli/basil combination, but I thought theh flavors mixed well! I'll definitely make this again.
