Chocolate Zucchini Bread I

My family loves this recipe. I make it exactly as written with one exception- I don't have the unsweetened choc on hand so use a piece of melted chocolate bar. Our 10 & 15 yr old love it knowing it has zucchini in it. Our 16 year old wouldn't touch zucchini with a 10 ft pole so we told him it's Chocolate Chip Cinnamon Bread..he gobbles it up!

Kids Favorite Meatloaf

I wanted to try this recipe as I wanted a Gluten Free meatloaf..so I used rice and corn Chex Mix instead of the wheat. My husband declared this the best meatloaf he had ever had..and I agreed! I used 3/4 of the mixture to make one small meatloaf and added rice to the rest of the mixture and stuffed 2 red peppers..added a little spaghetti sauce to the pan and those were fantastic too!! Can't wait to make again..was gone too fast. Just the right combination of spices..

Yellow Squash Dressing

Loved this recipe! Used the West Tennessee Cornbread recipe from this site for the cornbread. I did not add the milk and it came out perfect. Also cut the onion in half and we don't like the taste of sage, so substituted 1/4 tsp. poultry seasoning for the sage. Have requests to make again asap!

West Tennessee Corn Bread

LOVED this! I grew up on Jiffy cornbread mix and liked this even better. Love that it's gluten-free. I doubled this and made it in a greased cast iron skillet. The changes I made were used 1/4c. mayo and 1/4 c. creamed corn and used 1 cup white cornmeal and 1 cup yellow. It came out as yellow. I also didn't have buttermilk, so used the milk/vinegar resubstitute. We used the leftovers to make the Yellow Squash Dressing from this site. YUMMY! Even my kids are requesting both of these again...

Drunken Dogs

I served this to my Bunko group. I really liked them a lot and two people commented they really liked them..however, I still had over half left at the end of the night. I used Ballpark as that is the hot dogs my family likes, but they really plumped up so had to double the sauce. I might make these again, but I'll use regular size dogs.

Eggnog Cookies I

I had just purchased some Eggnog cookies at a bake sale and they were so good had to run home and recreate. This recipe was exactly what I was looking for! I did tweak it based on others reviews (I used a little more eggnog and only 1/2 tsp. vanilla)..but the one thing I copied from the bake sale cookies that I thought really added a lot of flavor was after the batter was mixed, I folded in about 1/2 cup pecan pieces. I used the powdered sugar/eggnog frosting and then sprinkled a few pecan pieces on the top. I also shaped them into longer cookies..just because that's what they looked like at the bake sale, but I'm sure they'd be just as cute round. A yummy addition to my cookie swap this year.
