Chicken Enchiladas II

Very tasty. Topped with guacamole, salsa, and sour cream. Flour tortillas worked well. I used 4-10" tortillas lined vertically in a greased 9x13. Cut them in half to serve and thus we had about 8 servings which filled us up.

Both adults and kids loved this! Of course, I omitted the alcohol from the kid version. It was great on Christmas day and sooo much better than the store.

Easy Butternut Squash Ravioli

Great recipe! 1 large butternut squash yielded 2 cups and therefore I doubled the filling recipe. I did not use an egg yolk, but it did not matter. Added a little extra cayenne just to give it a slight kick. I was unable to purchase wonton wrappers and instead purchased a 16 oz package of egg roll wrappers. Cut into quarters and made triangle shaped ravioli. The doubled filling was perfect for the amount of wrappers I had. Used about 3/4 of a teaspoon of filling in each wrapper. The fresh snipped sage and fresh peppered parmesan were elegant.

I am so glad I found a recipe for Pecan Pie that does not use corn syrup. This and a no bake chocolate pie were the dessert hits of this year's Thanksgiving!

Pea Shoots and Chicken in Garlic Sauce

Easy and very tasty. We added mushrooms and sugar snap peas along with pea shoots. Tasted like the Chinese place down the road without the MSG. Served with basmati rice, eggrolls, springrolls, and gyoza.

Chicken Pot Pie IX

This was amazing. Made the filling according to the recipe but instead of the pie crusts, I used a frozen puff pastry sheet cut to the shape of my 8x8 baking dish. Baked at 400 degrees until puff pastry was golden brown and fluffy. Family raved!

White Chili I

Great recipe! I used dry cannellini beans. Get directions on how to cook them, but the quickie version is hydrate overnight and then discard water, cover with new water in sauce pan and cook for a couple hours til soft (I added garlic, salt, bay leaf). I did not have to use the chicken broth because I used the broth from the beans. I had to omit the chilis because I did not have any, but family still raved! Served with chives and sour cream.

Simple Savory Pork Roast

Best Bread Machine Bread

My 4 year old said this is the best bread he's ever tasted and eats it plain. Took a couple of the suggestions: 2 TBSP honey instead of sugar and sub 1/2 cup wheat flour for 1/2 cup white. I make the dough in the breadmachine and when ready fold it under itself trying not to deflate it too much, put it in a slightly greased breadpan, top it with a damp towel, and place in a warm spot to rise again for ~30 minutes. Baked in 375 degree oven for 30 minutes. Took it out of breadpan and placed on rack when done to prevent softening. Very easy.

Easy Peach Crisp II

Very tasty. I used 7 fresh organic peaches sliced thin, but I could have added about 4 more and it still would have been great. I also added frozen raspberries. Blueberries would have been good too. Instead of all white flour, I did half whole wheat, half white. Brown sugar could have been added too for a more carmel-y flavor.

Lemon Sorbet

I would suggest doubling the recipe if you are using an ice cream maker. Very flavorful. I zested the lemon instead of dicing the rind. Rinds don't taste good and I think it gave it a better texture. Eat relatively quick because it will freeze hard if in the freezer overnight.

Fruited Ice Cream

I made strawberry ice cream and it reminded me of Breyers. I would suggest mixing the ingredients in a bowl and then chill for at least 1 hour (if not 4)before using the ice cream maker. The cooler you get all tools and ingredients, the less ice crystals you will have leaving you with a creamier product.

Amy's Cilantro Cream Sauce

Very tasty. We had a bbq and couldn't get enough of the stuff. I used cilantro fresh from the garden. Yummy. Instead of tomatillo salsa, I substituted my husband's fresh tomato salsa. Maybe made it better?

The Real Mojito

Picked some mint from my neighbors yard and mashed it in a bowl with an ice cream scoop. Used the simple syrup technique. The only problem was I didn't make enough (and I increased the recipe to 6 servings!)

Deb's Scallops Florentine

This was delicious. Skipped step #2 altogether and the scallops were cooked perfectly. Used only a smidge of mozzerella. Cooked 12 minutes at recommended temp and then broiled on low for 3 minutes.
