Raspberry Tiramisu

Reviewed: Feb. 14, 2010
I gave this 4 stars only because i didn't follow the recipe exactly. However, with the changes i made i would give it 5 stars! I could not, in good conscience, serve raw eggs so i substituted 1sm. box instant french vanilla pudding (following package directions) for the egg yolks. I whipped 2 cups whipping cream and use that in place for the egg whites. I used white chocolate on top only and didn't use the almonds at all. i also followed other reviewers and doubled the raspberries. I would also agree with previous review that this serves more than 6. I would say more like 12-16. Anyway, this was beautiful ( served it in a trifle bowl so you could see all the layers), delicious and easy to make. I would totally recommend this recipe!

Soft Christmas Cookies

Reviewed: Dec. 28, 2008
I've always been intimidated by making my own cut out cookies but these were wonderful! I agree with other reviewers to just use 3 cups flour and back at 350. Also, instead of 2 teaspoons vanilla i added 1 tp. vanilla, 1 tp. butter extract and 1 tp. almond extract. I also used a glaze recipe to top my finished product.

Rum Balls II

Reviewed: Dec. 9, 2008
We loved these! I've made a few different rum ball recipes but i think this will be the one i stick with from now on. The only thing i changed was to use butter cake instead of white and i added a little cocoa powder. They were wonderful!

Chocolate Yummies

Reviewed: Dec. 4, 2008
These were great and my 4 year old loved them. I made these when i was trying to clean out my pantry before the holidays so i used Golden Graham cereal instead of the graham crackers. The cereal became stale after a couple of days but it was easy to pick off. They were still good. I rated it 5 stars because the staleness may not have happened if i'd used regualr graham crackers.

Whiskey-Marinated Steak

Reviewed: Aug. 15, 2008
This was very good. it reminded me a lot of the Jack Daniel's sauce at TGIFriday's. I marinated the steaks in the sauce and then during the grilling process i simmered the sauce on the stove until it reduced and became more of a glaze and poured it over the meat to serve. the only problem was that when i did that it became very salty. i might try reducing the soy next time. other than that it was wonderful!

Marinara Dipping Sauce

Reviewed: Aug. 5, 2008
I thought this turned out pretty good. I made it with some tomatoes that were given to me from a friends garden. I had 1 3/4 lb of tomatoes. I like sweet/garlicky sauces so i added extra garlic and sugar. instead of 1t of sugar i added 1 1/2 T of white sugar and 1/2 T brown sugar. I also added the can of tomato paste as well as 1/4t of beef bouillon. i would have used beef broth instead of water but i didn't have any. I also used about 1/2t dried basil instead of the fresh. it turned out pretty good but didn't fulfill everything i was looking for in a sauce.

Barbecue Ribs

Reviewed: Aug. 5, 2008
this was pretty good. My husband and i loved the sauce. it reminded us of the Jack Danials sauce you get at TGIFriday's. However, the ribs were tough i thought. i may make them again but this time in the slow cooker. it's the only way i've found to make truely tender ribs that fall off the bone.

Key Lime Cheesecake I

Reviewed: Aug. 5, 2008
I made this for a potluck where the theme was Mexican. It was so good and there was none left to take back home. I made some changes. Instead of a graham cracker crust i made "hawaiian" type crust with 1 1/2 cup crushed Key lime flavored cookies (these i found at H-E-B. they had white chocolate chips in them), 1/2 cup finely chopped macadamia nuts and 1/2 cup shredded coconut. I almost bought a bottle of key lime juice but i noticed it said something about being extra concentrated. I wonder if that's why some of the reviews said the lime was too overpowering. I used fresh squeezed Key lime juice instead. I bought a 2 lb bag and, between the juicing and decoration, i used all but 1/4 lb. As for cooking, i usually use a water bath but it always makes my crusts soggy so i tried just putting the pan of water at the bottom of the oven this time and it worked perfectly. the crust was firm and crunch and my cake did not crack!I made real whipped cream to spread on top and i thought it made a light compliment to the bold key lime flavor. Thanks so much for the recipe. this will go in my collection

I'm not a big fan of ham because it's usually too salty for me but this was so good. and, of course, the marshmallows were a hit with my son!

Penne with Chicken and Broccoli

Reviewed: Jun. 2, 2008
If you like a sauce this is not for you. it was a very light garlic flavor that i really enjoyed. i added a little extra cheese. after boiling the broccoli and then sauteing it in the pan it just fell apart on me. so you may want to undercook it a little so it will hold up later.

Burgundy Roast Beef with Savory Sauce

Reviewed: Jun. 2, 2008
This was just ok for me. The "gravy" was really thick. The flavor was overall was good but i didn't like it as well as my normal tomato soup, mushroom soup and onion soup mix in a slowcooker recipe.

Chocolate Cookie Cheesecake

Reviewed: May 27, 2008
Each year my church (which has almost 1,000 members) has a chocoalte festival where people bring all things chocolate and they are judged, awards given and then we all enjoy. This recipe won me the grand prize! I made some changes suggested by another review (Kerri). I left out the cinnamon. I also added cocoa powder, cream and melted chocolate to the batter. I skipped the sour cream and marbled the top with dark and white chocolate ganache. This was the best chocolate cheesecake i've every had. I had people compare it to restaurant quality.

Ranch Burgers

Reviewed: May 27, 2008
This was SO good. I did make some changes. I used 1 lb of meat instead of two. I added a whole packet of Ranch mix to that 1 lb instead of only half a packet. Instead of saltine crackers i ground up some croutons. and because my family doesn't care for onions i used 2T of dried minced onions. These burgers were wonderful. the only problem i had was that they fell apart on the grill but i think that was my fault because i forgot the egg. Next time i'll try to remember the egg. These were so flavorful and moist. a keeper!

Creamy Chocolate Crescents

Reviewed: May 19, 2008
I made these for a baby shower and recieved several complements on them. Personally i thought they were good but not exceptional. I agree with a previous post that they could be a little sweeter. Also this recipe makes WAY too much filling. I didn't even use half of mine. I was worried that it would run out during baking too but it didn't. All-in-all it was just ok for me. I wont hold on to this recipe.

Chicken-Fried Steak Strips

Reviewed: Nov. 2, 2007
I though this was wonderful! I made a couple of small changes. First off,(and one thing i've learned from growing up in Texas) i used cubed steak instead of round steak. It made the strips very tender. second, i seasoned the meat with salt and pepper before dredging it. I don't usually make chicken fried steak very often because the recipes i've tried have always been so bland but this was very flavorful. Even my 3 year old, who only tends to graze at meal time, ate two strips.
