Blackened Tilapia with Secret Hobo Spices

Mexican Enchilada Bake

This is a really quick and easy chicken dish that includes your protein, some veggies, and some fiber. It's also VERY good! My husband loves it, and he's a pretty picky eater.

Nacho Chicken

Made this for dinner tonight. It was quite good. I didn't measure anything and I used shredded cheddar instead of American. And I used Spicy Nacho Doritos since we had some on hand. The only thing I would do a little differently next time is spice it up a bit more...but like I said, I didn't measure, so it may be spicier if you follow the directions exactly. The picky husband liked it too.

French Toast Corners

This was an easy FT recipe. Mine would have been better had I not tried to put so many in the pan at once! :) Still yummy though. Instead of maple syrup, I recreated a lemon curd recipe that I had at a B&B and used that as the topping. I will be fixing this again.

Beef and Broccoli

This is a very good recipe! Not only that, it's quick and easy. Great when you don't have a lot of time to make dinner. I only modified it a little, adding some soy sauce and some extra pepper. It turned out great - there was nothing left!
