About this Cook
I'm a newlywed and have been married since Dec. 15, 2007. I've been a vegetarian since I was 16, I'm 19 now and married a carnivore. As a result, hubby has been eating wierd (for him) things. I don't enjoy cooking as much as I used to as our apartment has a VERY small kitchen with hardly any counter space.
My favorite things to cook
Anything vegetarian. It's gotta be quick and easy, with simple ingredients. Living in a small town it's hard to find the more exotic ingredients. It also has to be cheap to make. Being newlyweds, we don't have a dime to our name. It makes for some creative meals.
My favorite family cooking traditions
Thanksgiving time. Mom makes this sweet potato casserole that has marshmallows on it and I go bonkers over it.
My cooking triumphs
Baking cakes. I've never been a baker and even though my cakes come out of a box, I get excited.
My cooking tragedies
Baking cookies from scratch. It just didn't work. I don't know why. I did spray the pan and it said not too.

Barbecue Tofu Sandwiches
I'm not a big fan of tofu but this was pretty good. It was really messy. My husband, a recent convert to vegetarianism loved it. That's why I giv it four stars

Polish Style Lasagna
Just got done eating this. It's pretty good. It seemed a little dry, maybe I messed up on the potatoes. I did add frozen zucchinni slices and just sauteed those with the onion and the minced garlic (I added the garlic.). My husband, who is learning how to enjoy vegetarianism enjoyed it and said he was "very impressed." And he is a very picky eater.

Eggplant Parmesan II
This is an AWESOME dish. I first made it when I was still living at home, in high school. My meat and potatoes parents loved it! When I lived in a "dorm" I made it for a bunch of the people and staff there. Everyone loved it!!! I do recommend soaking the eggplant slices in salt-water. It'll get some of the bitter seeds out. It's hard to find good eggplant in Nebraska so it's a treat when the garden is done.
