Velvety Pumpkin Soup With Blue Cheese and Bacon

A good fall/winter soup. The recipe says to simmer for 10 minutes over low heat. I brought mine to a boil so that the ingredients would combine, then simmered. Also, unless you have a shallow bowl, the bacon and cheese sink and are not actually a "topper".

Best Chocolate Chip Cookies

My rating is purely on the cookie dough alone. I never get to make cookies out of it because my family polishes off the dough before the oven is even warmed up!

Deluxe Mashed Potatoes

I thought perhaps a little dry, but my family liked them as was. I would definitely add cream cheese at room temp to get a better mix. The potatoes seemed to be better the next day. Plenty of room to play around with this recipe and create something to your taste.

Grape-Walnut Salad

What a refreshing salad! My store didn't have green grapes, so I used red. With the blue cheese dressing and walnuts, everyone raved about it. Next time, I would add blue cheese chunks to give it an extra kick.

Steak Tip Marinade

The only change I made in the marinade was due to not having garlic pepper. I replaced it with 1/2 tsp minced garlic and 1/2 tsp Montreal Steak Spice. Our steaks marinaded for 5 hours. The flavor so so good and reminiscent of traditional BBQ that there were no leftovers!

No Bake Cookies III

I remember making these cookies as a kid. The recipe first came to me as part of a grade school health class. They are quick, easy and yummy! For more peanut butter flavor, use crunchy pb.

Chicken Breasts with Lime Sauce

Quick & easy. I added black pepper to the bread crumbs & omitted the chives as I didn't have any on hand. Also had no limes, so used jarred lime juice. I think it still turned out good. The only downfall was that the chicken breasts didn't cook as fast as the recipe called for. Had to stick them in the oven to finish cooking.

Ground Beef Shepherd's Pie

The basil gave this recipe a good flavor. I made it without the cheese and it turned out nice. What I like is that the cook can easily change veggies in this recipe to keep it interesting and different.

Artichoke Chicken

While a good simple recipe, it was one my family didn't like bacause it was so rich. I also messed a bit with it to give it some more flavor. I put some lemon pepper directly on the chicken breast and added more than a pinch to the artichoke mixture. While baking, I put lemon slices on top and that gave it a nice tangy flavor. Not something I would make often, but once in a while for company.

Herbed Sweet 'n' Sour Chicken

A very good recipe with some changes. LET THE CHICKEN MARINATE! Be sure to reserve some sauce for basting, but if you let the chicken marinate (all day), this has excellent flavor and comes out tender! I also used chili powder because I didn't have cayenne at hand. I cut the amount in half because we don't like spicy food. Also good with "taters" instead of rice.

Winter Squash Casserole

This recipe is so yummy! I love squash and I'm always looking for new ways to prepare it. The combination of flavors reminded me of carmel popcorn. Very sweet, but an excellent side to any main dish.

Pumpkin Turkey Chili

As is, this recipe is good. A little tinkering and it could be better. It looked like it would end up dry, but was not the case. Had a yummy flavor, but not the punch of most chilies. Next time I would add more chili powder, plus beans. It was missing the kidney bean texture.

Flourless Peanut Butter Cookies

I don't know if I'm doing something wrong, but I can never get these cookies to turn out. They run all over the cookie sheet as they cook and turn hard right out of the oven. The 3 stars is for the dough. That is yummy enough to eat on its own.
