Grilled Salmon I

best grilled salmon we've made yet. used minced garlic vs. garlic powder and fresh cracked pepper. didn't have lemon pepper but it still tasted great.

Health Nut Blueberry Muffins

delicious mini muffins. i followed some of the suggestions and used 1/2 cup of quick oats instead of the wheat germ & bran. added 1 tsp cinnamon and 1/4 tsp nutmeg. used 1 cup milk+1tbsp vinegar to sub for buttermilk. mixed frozen blueberries into the dry ingredients. very moist and yummy. house of 4 enjoyed them

Zucchini Brownies

Did not make the frosting because I'm not a fan of frosting with brownies (too much extra sugar) but the recipe is delicious as is, even without the frosting. Used 3 zucchini, pureed in the food processor and there was plenty of moisture from the zucchini. The brownie was very moist and seemed to become more moist the next day. The batch is almost all gone after 3 days with 3 people devouring it. I'd be interested to try substituting applesauce for some of the oil to cut down on fat and also adding in espresso or coffee to give it a different flavor but that will be in the next batch.

pretty delicious. followed advice of others and used 4 bananas, added applesauce, 1 tsp cinnamon, 1 tsp vanilla, dash of nutmeg and chocolate chips. omitted nuts. these were gone in a day

Spinach and Strawberry Daiquiri Salad

tasty! my husband who doesn't normally like fruit in salads enjoyed this. he also does not like anything with vinegar so this dressing was a good alternative to the typical strawberry salad dressing that has vinegar or is a balsalmic vinaigrette. easy to make and quick to assemble.

Potato Leek Soup I

tasty. very thick like other reviewers said. I ended up adding water to thin it out. I also added minced garlic when cooking the leeks (used the whole leek). I didn't need to add any salt because the chicken broth had sodium. I'd recommend using low sodium broth if you think its too salty.

Streusel Apple Pie

everyone who had this liked it a lot, our only complaint was that the bottom crust was soggy. the topping and filling were amazing. i just used 3 uneaten braeburn apples and 1 pink lady and it was delicious!

Stuffed Peppers with Turkey and Vegetables

made some substitutions...didn't have mushrooms...added corn. cut the peppers in half vertically and filled each half with the mixture. used jarred pasta sauce instead of tomatoes. topped with a sprinkling of shredded mozzarella. delicious!

Banana Pancakes I

delicious! I took the advice of other reviewers and added 1/2 tsp vanilla and some cinnamon to the batter. I didn't add the vegetable oil either and I only used 1 banana which was plenty. I added chocolate chips and we enjoyed these very much.

Baked Zucchini Chips

My husband liked these and i thought they were decent after adding a lot of spices. otherwise they would have been pretty bland. we added more black pepper, onion powder, chili powder and cajun seasoning. sliced thin and they did not crisp up like chips but were still tasty.

this was very quick and easy to make - husband liked it but I thought the flavor was just ok. the sauce is pretty tasty. I'd try it again but maybe with a different fish or chicken.

Bacon Asparagus Pizza

not as good as some other pizzas but probably pretty healthy compared to some others. cut back on the bacon (used 2-3 slices chopped), cut back on goat cheese - 11 oz was too much! lightly sprinkled with goat cheese. bf gave it a 3 but i'd give it a 3.5 to 4

Corn Dog Muffins

i used jiffy mix and it got stuck to the muffin pans and the hotdog pieces separated from the muffins. tasty but next time i would cut them into smaller chunks and maybe use a different mix.
