Kingfish Enchiladas

We loved this recipe! I used fresh salsa and marinated the fish in mojo since I didn't have any italian dressing. Also used corn tortillas since that is all I had. Baked about 20 minutes and then finished it under the broiler for a few minutes. Really good!

Easter Grain Pie

I made this pie with a few changes. I used a frozen deep dish pie crust with no top, cooked pearl barley instead of wheat berries and added roasted pine nuts to the mix. I also cooked it a little longer than the recipe calls for. It turned out great! Even my italian mother-in-law loved it. Now I can bring the Easter Pie to family gatherings with confidence!

Chicken and Mushroom Chowder

I made this last night and my hubby & I loved it! I used 2 cans of broth and brown rice, left out the water, added butter to the olive oil when cooking the veggies (used portobellas and put in extra because I love them)and then deglazed the pan with a little red wine and added that to the pot. I also used half & half and another 2/3 cup of 1% milk plus a little nutmeg at the end. I did add salt & pepper to taste as I was cooking. I almost always add more spices to any recipe I make but I think the recipe as it stands is a great one. I will definatley make this again and again!

Citrus Turkey Brine

I'm giving this 4 stars because the chicken did turn out very tneder but as for flavor I guess I expected more. I read alot about brining beforehand and it says not to brine more than 5-6 hours and also to brine even for a couple days so I was afraid to brine for too long so only did it for 6 hours. I put the fruit in the cavity along with a few garlic cloves. If not for that I don't think the chicken would have much taste. My usual method of heavy seasoning inside/outside of the chicken with lemons & garlic in the cavity tastes better, I think. And much less work. But I may try it again and brine for a longer period next time.

Harvest Pork Stew

This stew was pretty good! I made a couple of changes. I used a copy cat recipe of Prudhommes Poultry Magic on the meat when I browned it and then salt & pepper to taste later. I also used sweet potato instead of white. I hate Macintosh apples so i used Galas that I had in the fridge. I cooked it a little longer than 20 mins after adding the potatoes, squash & carrots. I'll be eating the leftovers today and think it will taste even better! Thanks for a stew that's a change from the usual.

Steak Tips with Mushroom Sauce

I have made this mushroom sauce many times and I have to say it is wonderful! I use a cabernet that I would drink in a glass. Cheap wine has no place in this recipe! It cost more to make but it is oh so worth it!

Escarole and Bean Soup

My husband, who is italian, loves this soup! It's super easy and healthy. The only thing I changed is I pinched little sections of Jennie-O turkey italian sausage out of the casing and formed into little meatballs. Browned them in a separate pan and added them to the onions & garlic after sweating them. The meatballs really made it into a meal. It tasted awesome. I also think the adobo spice is a must! This recipe is a keeper!
