Sunday mornings. My dad works a lot during the week and usually only gets Sundays off. He would always get up early with my mom and cook biscuits and gravy with apple-cinn muffins.

Chicken Tortilla Soup V
This is a good starting point, but I used some of the advice of the other posters. This is what I did and it turned out AMAZING. I boiled the chicked in water with garlic and salt as advised NMR. I used a full 34 oz of chicken broth, but don't do this unless you are going to cook it down for a few hours. I used much more chili pepper and cumin than the recipe asked for because it was tasting too much like chicken broth. After a shredded the chicken I sauted the onion with garlic and the chicken then added the chicken broth and corn. I let this cook for 2-3 hours on a low simmer. About 30 min before serving I added 3/4 can of black beans. This gave the soup more substance and a great flavor. I served it in a bowl with a small amount of white rice at the bottom. I put 2-3 slices of avocado on one side and tortilla chips on the other than topped it with jack cheese. My friend came over for dinner and a movie she was raving about it all week!!

Ceviche Self-Portrait
I made a few changes I did 1/2 lb bay shrimp. (the little ones) 1/4 lb immitation crab and 1/4lb bay scallops (little ones). I did a rought chop of all making sure to chop the scallops more than the crab and shrimp because they were already cooked. I put all the scallops on the bottom so they would be submerged in the lime the most. I cut all the veggies and added a handfull of cilantro. Mixed it all up and added some tapatio. Let it sit over night. YUM YUM!

Pita Chicken
chicken was tuff and not very tastey. Maybe I bought the wrong pitas but they totally fell apart while trying to eat.
