Lite Coconut Cake

This cake was EXCELLENT! Followed others suggestions and made modifications. With the box cake mix I used the lite coconut milk instead of water; coconut oil instead of vegetable oil (but the coconut oil is semi solid so I was a little worried about how it would blend into the batter - maybe soften slightly in the microwave next time)and used egg whites from a container. For the center layer, used lite coconut flakes that were unsweetened and fairly small (from Sprout's) that was mixed with Splenda Blend and sour cream: the filling was VERY dense and not easily spreadable so ended up sort of dabbing and gently spread across the cake so wouldn't tear it. (Next time would just mix in the lite whip cream to make it more spreadable - also eliminating another step). Refrigerated for one day and it was EXCELLENT! The coconut oil that I was concerned about seemed to blend into the batter and no one ended up with a bite of coconut oil. Everyone enjoyed it and wanted the recipe....but the best thing was one, as a guest is Diabetic, was that this cake had minimal impact to their blood sugar. A winner all around!!

Bread Pudding II

This recipe was absolutely right on target. I had a loaf of panettone bread from Xmas past and the expiration date indicated it was still good, so rather than throwing it away I decided to use it in this recipe for the bread. I also used 1/2 cup of sugar (since the panettone is a sweet bread) and changed that further by using 2T of Splenda Blend with 2T of Splenda Brown Sugar (Splenda takes 1/2 of regular sugar). I soaked the raisins in boiling water before adding (they were on the dry side and wanted them moist). Everything else was the same. It was the perfect comfort food!

Plum Clafouti

Followed the recipe exactly and everyone enjoyed it! The sides raised higher then the center, but it turned out fine regardless looking a bit odd. Used ripe plums and they came out soft not runny after cooking. Easy to make and we thought that it had the right amount of sweetness.

Baked Teriyaki Chicken

Tasted GREAT! Used Splenda Blend instead of straight sugar and didn't taste any difference. Sauce thickened very quickly. Went together fast and easy.

Red Raspberry Vinaigrette

Tasted GREAT! Didn't have seedless jam, so used the regular seeded raspberry and after mixed, strained it. Sometimes chopped seeds will change the flavor, but this time it didn't seem to have an impact.

Beth's Spicy Oatmeal Raisin Cookies

This receipe made the BEST oatmeal raisin cookie I have ever tasted!! Followed the recipe exactly with only one simple change: used my cookie scoop for dropping the batter on my sheet but batter was very stiff so pressed the cookie top slightly flat (batter doesn't flatten during the cooking process). Perfection!

Fluffy White Frosting

I tried using Splenda Sugar Blend and I was surprised how well it turned out. In step one, the sugar mixture turned clear after boiling. Step 2, I didn't allow the egg whites to warm up to room temperature which is probably why I had a hard time with whipping to a stiff peak. I thought I had achieved stiff peaks but after I piped it on the cupcakes it didn't hold its shape. Also, suggest using larger sprinkle topping - I used the tiny candy balls and they didn't stick very well so those little sweeties rolled every which way around my kitchen. Hubby loved this frosting so much he decided to save some calories, skipped the cupcuke and had a bowl of frosting - straight....he didn't notice the lack of stiff peaks. A sure sign this is a keeper!

Spinach and Strawberry Salad

This salad turned into a big mess. A few minutes after dressing the salad the spinach wilted into little globs in the bowl. The sweet sour taste was not appealing to our palate. Maybe it was the vinegar? Not going to try it again

Simple Turkey Chili

Roasted Garlic Cauliflower

Excellent! I tried mixing all the ingrediants together at one time (lazy) and the cheese burned a bit but was still a family pleaser. I'll follow the recipes next time and I'm sure it will be even better!
