Parmesan Crusted Chicken

Reviewed: Mar. 20, 2012
This concept works really well on fish filets, too. I added a little lemon juice and garlic powder, spoon on tilapia and baked about 20 minutes. Delicious! I make this often with rice and a green vegtable for dinner, and it takes so little time, and is very impressive.

Pumpkin Bread IV

Reviewed: Oct. 16, 2011
I made this exactly as written and it turned out beautifully. I added raisins and nuts to one loaf, (I loved it that way!) and left the others plain. This was perfect-just spicy enough, moist, and a wonderful crust. It makes 3 large loaves-which is a good thing in my house! Thanks for a great recipe!

Bacon Corn Chowder

Reviewed: Oct. 11, 2011
We made this for a tailgating party, and it was a huge hit. The only thing I did differently, as another reviewer suggested, was to cook the bacon separately to let it brown and crisp up. Then I added it after the vegtables were softened. Some added a dash of hot sauce-some were very happy with it as it is written. I was requested to send it to many of the guests. One guest was from Norway, and I was able to re-calculate in metric proportions for her-thank you very much!!!

Coconut Cookies

Reviewed: Jul. 2, 2011
I just baked these for a picnic, as I had all the ingredients in the pantry, and they seemed simple to put together. I agree with one of the other reviewers who said they needed some salt! I added a 1/2 tsp to the dough after tasting it, before baking, and it made a big difference. The cookies are a nice texture, and good, but next time I'm thinking they would be even better with some nuts or white chocolate chips (or both!) added. It's a good basic recipe.

Spiced Banana Cake

Reviewed: May 30, 2011
I made this and followed the recipe exactly. I baked it in a bundt pan for about 35 minutes, and it came out beautifully. I liked the flavor very much, but not sure I loved the oatmeal in it, as it added a "chew" I wasn't crazy about. I am a big fan of oatmeal in cookies, etc. but it didn't work in this, as far as I was concerned.

I make this every year for my student's recital. I use raspberry sherbet and cranberry ginger ale. It's a beautiful color, delicious and refreshing.

Banana Nut Bread III

Reviewed: Mar. 6, 2011
I have tried so many recipes for banana bread. I haven't found one that was easy to put together, smell good, and taste delicious like this one. It has just the right amount of sweetness, and moisture. I also appreciate the fact that an amount of mashed banana was used instead of just number of bananas, which can really vary. I didn't change a thing. They baked for just 45 minutes....one was half devoured before it had time to cool!

Cabbage, Potato and Baked Bean Soup

Reviewed: Jan. 10, 2011
I made this soup yesterday on a snowy day and found it to be easy, and quick to make. Upon tasting it, I felt it was rather bland, and not enough broth. On a whim, I added one more can of chicken broth and a can of condensed tomato soup. It made a big difference in the flavor, and it was hard to stop eating! I recommend it.

Broccoli Salad

Reviewed: Jan. 2, 2011
I LOVE this salad! I made it to serve Christmas day with ham, and it got raves from my guests. I made it proportionately for 12, and it worked beautifully. ( I really appreciate that yield option ability on this site!) I did take the suggestions of adding some raisins and sunflower seeds, and would recommend that addition. Use a sharp cheddar, too, as it tastes so good with the bacon and onion.......thank you!

Waikiki Cornbread

Reviewed: Dec. 23, 2010
This was delicious, and very easy to make. It was very crumbly though, and difficult to serve nicely. I made it twice-once I added some frozen cooked corn, which made it more intesting. Worth making, for sure!

Pumpkin Pie III

Reviewed: Nov. 28, 2010
This is the best pumpkin pie I ever made! Thank you Marcia! The only thing I add was about 1/2 tsp. ground clove, because I like it, but I'm certain it would be great without it, too. The molasses was the big difference. It's hard to imagine that amount would make that much difference to the taste, but it added a wonderful, rich, flavor that enhanced the pumpkin flavor so well. Thanks for posting....I will not use any other recipe ever.

Pumpkin Gingerbread

Reviewed: Nov. 13, 2010
If I could give this recipe more than five stars, I would! I prepared exactly as written, and baked it in a prepared bundt pan. It took a about an hour and 10 minutes. I let it cool in the pan about 20 minutes and then cooled it on a rack. I frosted it with vanilla butter frosting, and topped with some chopped pecans. It was moist, had a wonderful aroma and had a delicious flavor, that was a big hit at a luncheon. I had to print the recipe for some of my guests before they left! This is a keeper!!

Mama's Italian Wedding Soup

Reviewed: Feb. 21, 2010
This was my first attempt at making this kind of soup, and I was surprised how quickly it came together-we were enjoying it in no time at all! After reading reviews, I did add a little garlic powder to the meatball mixture, as it made sense to me. It's Italian, isn't it? It was delicious, and really healthy! I'll be making this recipe often.

Easy Grilled Lemon Chicken

Reviewed: Nov. 1, 2009
This recipe certainly was easy, and lo-cal, which is what I was looking for. I did add 1 tsp. of minced garlic. It seemed to need it along with the soy/ginger combination. I marinated it a few hours, which made it flavorful and tender. So easy, inexpensive, and delicious!

Buffalo Style Chicken Pizza

Reviewed: Jan. 19, 2009
I'm a gal from Buffalo,(and real chicken wing lovers!) and my whole family enjoyed this easy, yummy recipe. I used less dressing than stated, as I was worried about it making the crust soggy. I cooked it directly on the oven rack which kept the crust crispy like we like it. This was delicious-don't hesitate!

Oatmeal Raisin Cookies VI

These cookies were good, but a little flat. In the last batch in the oven I added a little salt. It made a big difference. I also added some pecans, which I just happen to like in my oatmeal cookies!

Meatloaf

Reviewed: Apr. 11, 2008
I followed directions measuring carefully. It smelled wonderful cooking and I was very much looking forward to eating this meat loaf. I let it sit for a few minutes, and then when trying to remove it from the loaf pan, it completely fell apart into a mushy mess. I scooped it up, put it in a casserole dish and covered it with the mashed potatoes and baked it-we are about to eat now-I'm now calling it Shepherd's Pie! Let's hope it tastes better than it looks!

Marshmallow Treats

Reviewed: Mar. 24, 2007
This can easily be done in a big microwave safe bowl in the microwave. Melt butter for 30 seconds. Add marshmallos , cook on high for 45 seconds, stir and then add the crispies. I also like to add a big spoonful of crunchy peanut butter to the marshmallow butter mixture-then continue as before-delish!
