Mom's Zucchini Bread

This recipe is the best zucchini bread recipe you will find. I use 1 cup of white sugar and 1 cup of brown sugar instead of 1-1/4 all white. The brown sugar adds a little extra unique flavor that makes it special. 2 cups total is plenty sweet. I also use 3 cups of zucchini instead of 2 and 1/2 cup sour cream and 1 cup of mini chocolate chips. Make note of a tip: dust your chocolate chips in flour before adding them to the batter. This gives them a light coating that makes them float and mix more even through the bread instead of sinking to the bottom. . These slight twists make this bread moist and incredible. This freezes well when wrapped in parchment or wax paper and then in foil. Then I slide it in a ziplock bag. It defrosts moist and almost as perfect as fresh. My family inhales this stuff!!! Sometimes I have to sneek a couple loaves into the freezer just to make it last!

Chicken Breasts with Balsamic Vinegar and Garlic

This is a super dish! One hint is to defrost your chicken breast, then put them into a ziplock bag and pound them thin! Then dredge them in the flour and continue with the recipe. It makes the chicken tender, moist and delicious!

Spicy Slow Cooker Black Bean Soup

I made this soup for my husband and his dad. I used 4 cans of black beans instead of the dry. They RAVED at the flavorful broth and spicy kick! Since then, I have experimented with adding italian sausage. It is a keeper in our house!!

Chocolate Chip Muffins

I made these muffins for "snack day" at my son's kindergarten. Everyone raved at how moist and delicious they were. I added 1/2 cups milk and 1/2 cup sour cream. I used mini chocolate chips and made mini muffins. They had to bake about 10 minutes, and they were perfect.

Chicken Cordon Bleu II

This is a good recipe. I added some salt, pepper, and maybe a little ground marjoram to the flour paparika mixture. I doubled the sauce and made it ahead, then just heated it up and poured the hot sauce down over it. It is good using chicken broth instead of the white wine if you choose. I was able to fix dinner in the morning, head off to the waterpark all day, and come home to a great meal that I just had to heat and serve. This one is a keeper!

Sweet Dinner Rolls

This recipe uses the exact same measurments as my longtime family favorite! These rolls are sweet and delicous. You can also roll the dough into 36 small balls, place 3 balls into each muffin cup of a standard muffin tin and they make 12 pretty clover rolls! This recipe is a keeper!!

Dirt Cake I

this is such a cute recipe! I make these in individual cups to serve at school. Another idea to please those not into eating worms... Use vanilla pudding, vanilla crushed cookies for sand instead of dirt, and add a mini coctail umbrella and a square cut from fruit by the foot for a beach blanket. It makes a cute beach scene instead of a dirt and worm scene!
