I don't cook from scratch a lot, but when I do, I like to get creative, and somehow I always know what spices to put with what and which wines to use with which dishes.

My cooking triumphs
My Thanksgiving Pie (recipe in my profile). One day I was trying to use up what we had in the house and I came up with this amazing savory pie. Comfort food personified!
My cooking tragedies
I have the hardest times with roasts. I hardly ever get them to come out tender and almost always have to "save" them by shredding the meat and creating puff pastry pockets.

Berdean's Cube Steak
I didn't have beef bouillon, so I took a little beef gravy and mixed it with water, then covered the steaks with that. I was a little nervous that cooking the steaks for 2 hours would end in disaster, but I kept the faith and these are the best cube steaks I've ever made. Will definitely be adding this to our rotation!

Easy After Work Chicken Francaise
I have been looking for a good lemon chicken recipe that doesn't use white wine (my hubby can't stand wine in anything, unfortunately) and this one is perfect! The only changes I made were that I left out the salt & pepper and didn't serve w/ parsley or lemon wedges. Next time I will drain off the oil from the pan before melting the butter. Other than that, I wouldn't change a thing!

Oven-Fried Pork Chops
Finally!!! Pork chops the whole family loved! I made this tonight, with the following changes: I skipped the pepper (which I will add next time) and I subbed Italian flavored bread crumbs for the stuffing mix. I'll add the pepper and some salt to that next time. I also melted my butter in the baking dish in the pre-heated oven while I dredged the chops. Using homemade butter helps keep the butter from burning. These were great and I will definitely add them to our rotation, which is saying a lot because I usually HATE pork chops!
