Slow-Cooker Chicken Tortilla Soup
Very good and very easy. I love slow cooker recipes that don't require any work ahead of time-jsut dump and cook. The only thing I would change would be to use a homemade version of enchilada sauce, and that is just my preference for healthier options. Otherwise, it's great!!

Seafood Lasagna I
Loved this recipe but can't do 5 stars only because I changed it up a bit. I incresed the sauce by 1 cup and added old bay, oregano and garlic powder. I also added some mushrooms to the sauce. I added a layer of spinach just for some green and used imitation crab (only because I had some on hand from a sushi making party the night before); it would be much better with regular crab. That being said, everyone LOVED this. MY husband and fatherinlaw each had 2 huge servings and even my 18 month old lapped it up! I will definitely be making again!

Veggie Pot Pie
LOVED THIS! I followed the recipe exactly, but did do what others recommended and added 2 tblsp. of cornstarch and subtracted one cup of vegetable broth. It was delicious, and it made enough filling for me to freeze filling for a second pie (I used a regular pie plate for the one I made). I even got a VERY pick 15 month old to eat it, and he hates pretty much everything that is inside of it. He gobbled it up! We will definitely have this again!
