Creamy Cajun Shrimp Pasta
Great with a little tinkering...I agree that you need to reduce cajun seasoning to 1 TBSP, and do taste before adding any salt. As others stated, my sauce was too thick as well. Add some white wine or some additional milk. Also, it needs quite a bit more garlic to give it some flavor. I used low fat margarine instead and find this to be a pretty good "cream" sauce with much less fat than you would expect.

Quesadilla Jalapeno Spread
Fantastic! I doubled the peppers (used fresh jalapeno/habenero/green pepper mix) and used green pepper juice instead. Really spicy like we love it - very versatile sauce. Try dipping corn on the cob in it, with some fresh lime juice...yum!

Orange Cilantro Rice
I thought these flavors did not compliment one another at all. I usually don't throw food away, but nobody would eat it (me included). Sorry, maybe it's just my family's taste but we normally eat anything with cilantro...?
