Chocolate Angel Food Cake I

Reviewed: Jan. 5, 2014
Love it! I use a 16 oz carton of liquid egg whites (costs the same as a carton of eggs and waaay less work and waste). The first time I made this I used a Bundt pan and chocolate glaze frosting and it was perfect. (Though most of the family thought the chocolate glaze was a little much on the chocolate cake). My grandfather has requested this for his 84th birthday cake, so you know it's a winner!

Apple Crisp II

Reviewed: Dec. 25, 2013
Awesome! My 15-year-old son has made this twice, and the whole family LOVES it. No changes to the recipe at all - perfect as is (and delicious with vanilla ice cream)!

Caramel Corn Snack Mix

Reviewed: Dec. 25, 2013
Delicious! I'm not sure how large of a baking pan you're supposed to have, though... I had to split the popcorn/pretzel mix into two pans and it was still very difficult to mix without pieces falling all over the place. I sprinkled a little allspice and cinnamon on one batch and it was awesome (gave it a festive flavor for Christmas). Overall, great recipe and I would make it again.

Squash Pie

Reviewed: Nov. 4, 2013
Very yummy. I cut the recipe in half and made exactly the right amount of filling. Dad and Grandma took home the left-overs, so this pie is a winner!

Chicken Alfredo

Reviewed: Jun. 17, 2013
This was a creamy sauce but did not taste like an Alfredo. As it cooled during the meal, the sauce became much thicker and we could taste the cream cheese more strongly.

Pumpkin Spice Cupcakes

Reviewed: Dec. 23, 2012
Used oil instead of butter (personal $ preference) and added extra 1/4 cup of pumpkin. Used full teaspoon of Allspice as I didn't have ground cloves. Baked for 15 mins in paper liners (dark pan). Delicious without frosting, and the kitchen smells awesome!!

Mmm-Mmm Better Brownies

Reviewed: Dec. 20, 2012
Really good cocoa brownie recipe! I followed it as written (but doubled it and used an 11x14 pan). I would have liked a fudgier brownie (which I've found is harder to achieve with cocoa powder) so next time I'll use butter instead of oil as suggested by others.

Microwave Pickles

Reviewed: Aug. 6, 2012
Wicked easy and awesome!! I left out the celery seed (didn't have any) and used mustard powder instead of mustard seed; also added a couple sprigs of fresh dill and a sliced red bell pepper, and reduced onion to one medium instead of two small. Makes a VERY sweet pickle (which is fine with me but not so with kids and hubby) so next time I will reduce the sugar and add a little more dill.

Laura's Easy Oatmeal Squares

Reviewed: Mar. 20, 2010
These are delicious, and very easy. I baked them in greased mini-muffin tins. They did get quite hard and crumbly once cooled, but the crumbs made an awesome yogurt topping! Instead of 2c oatmeal, I used 1 1/2c oatmeal, 1/4c coconut and 1/4c finely-chopped pecans and left out the almonds.

Eggnog Fudge

Reviewed: Dec. 26, 2009
Couldn't have asked for a more awesome eggnog fudge! I only used 1 1/2 cups sugar and it was still wicked sweet, but awesome! It also set perfectly at room temp overnight.

Basic Truffles

Reviewed: Dec. 26, 2009
Awesome! I used white chocolate chips then chilled overnight. Next morning I formed them into small balls and chilled again while I melted butterscotch chips, then dipped in the butterscotch and set at room temp. Wicked rich, but absolutely delicious!

Toll House® White Chip Chocolate Cookies

Reviewed: Dec. 26, 2009
Awesome cookies! Used mint-chocolate chips and baked heaping-tablespoon-sized lumps on stone for 12 mins. Still soft 4 days later, gone by the 5th day :-)

Garden Tomato Salsa

Reviewed: Sep. 23, 2009
Sorry- we really didn't like it. All I could taste at first was cilantro, so I doubled the onion and peppers and added cumin and garlic, then let it set overnight. It didn't help.

Brenda's Pepperoni Chicken Rollups

Reviewed: Mar. 10, 2009
Super easy! I'm no expert chef, and the idea of rolling chicken breasts sounded difficult, but it only took me 20 minutes to prepare 10 rolls. I used turkey pepperoni, so I browned the rolls in cooking spray before removing the toothpicks and baking in sauce, then serving over spaghetti. Excellent family dinner- thanks for the recipe, Brenda!

German Apple Cake II

Reviewed: Sep. 24, 2006
This is an absolutely delicious cake! I made it for my son's 8th birthday, and he's requested it multiple times since then. Extremely moist- definately not a finger food, doesn't work as cupcakes (they were really tasty, but messy!)

Oatmeal Apple Muffins

Reviewed: Mar. 26, 2006
I made "muffin-tops" out of this recipe- just plopped 2tb onto a cookie sheet and baked at 350 for 14 min. I used skim milk instead of 1/2&1/2, white flour instead of wheat, and omitted the nuts. They are absolutely delicious! Not dry- (wheat flour is very dry and dense- haven't figured out a way to make it taste good yet) Very yummy!

Sweet Potato Bread I

Reviewed: Feb. 11, 2006
Excellent! I made muffins instead of bread, and my kids loved them. I did use only 1 cup sugar, and they were plenty sweet enough. It's so hard to find a healthy, low fat muffin or bread that tastes good- this one's a winner!

Slow Cooker Pineapple Pork Roast

Reviewed: Feb. 1, 2006
This was excellent- I left out the salt and pepper (the roast was salty enough), used pineapple rings and 1/4 c Orange Craisins. The roast was frozen solid when I started, so it took about nine hours (I turned up the heat for the first and last hours). Awesome recipe!
