Southern Grits Casserole

This was really good. I did use egg beaters in place of the eggs as well as reduced fat sausage & cheese. I also added some minced garlic & a can of green chiles. Served this at brunch & everyone loved it. They never even knew that I had "lightened" the recipe...and I didn't tell, either!

Frozen Mojito

Very tasty and much easier to make than the traditional mojito. I put the mint in the blender first and had no problems with needing to strain the leaves - they became miniscule fragments! These are great when it's hot outside - refreshing, sweet, and powerful!

Blue Cheese Coleslaw

Feta Cheese and Bacon Stuffed Breasts

"Eh." That's all, just "eh". Nothing spectacular here. As noted by other reviewers, this recipe calls for too much oil & oregano. I cut back on those ingredients & added more lemon juice to the sauce. I also used a kalamata olive/sun-dried tomato feta and still the flavor was just average.

Field Salad

Pretty good, but I thought it had too much of just about everything for the amount of greens - too many nuts & apples as well as too much cheese & dressing. The flavors were good, so I will try this again with the same amount of greens & half (or less) of the other ingredients.

Fra Diavolo Sauce With Pasta

Excellent! I omitted the scallops & doubled the shrimp. I also used 2 cans of petite diced tomatoes and added about 2 Tbsp. of chopped kalamata olives. This is just sooo good - and I don't typically like tomato based dishes!

Italian-Style Spaghetti Squash

This was terrific! Such a wonderful, summery flavor. I added a couple of cloves of chopped garlic in with the onions as well as some Italian seasoning. I also used a can of drained diced tomatoes instead of chopping fresh. So simple & yummy.

Cha Cha's White Chicken Chili

This is sooo good! I'v made it several times in the past few weeks. As suggested by others, I puree one can of the beans for a thicker consistency, but other than that I haven't made changes. Yes, it is hot - but you are warned of that ahead of time, so don't be surprised! If you REALLY like hot, it's perfect. My husband REALLY, REALLY likes hot & adds additional spice to his bowl. He uses something called "Z" from CaJohn's Fiery Foods that has 4 million Scoville Units. That's almost 7 times hotter than a habanero pepper. Now that's hot!

Spinach, Sausage and Cheese Bake

This was a pretty good recipe. I used fresh spinach, as well as sauteed garlic & onion. I was a little unsure about using fresh spinach, but it worked fine. Mine was a little bit soupy, so we put it over the Asparagus Zucchini Rice recipe from this site. It made a suprisingly good combination.

Unbelievable Chicken

My family really enjoyed this recipe. After reading some of the other reviews, I reduced the brown sugar to 1/4 cup. The combination of flavors was terrific!
