Southern as You Can Get Collard Greens

These are fantastic! They came out exactly as I had hoped. They were great with a roasted pork loin and the Acorn Squash with Apples recipe from this site.

Spinach and Rice (Spanakorizo)

This was quite tasty! I used 3 10oz. boxes of frozen spinach and added some cayenne with the seasonings. The lemon and feta really bring the flavors together. Hubby threw Tabasco on top, but hubby does that to EVERYTHING. Served it with grilled Greek chicken from this site and it was great - and very filling.

Greek Chicken

This was pretty good. I used boneless, skinless chicken breasts, dried herbs, & about half of the olive oil. Served it with the spanakorizo recipe from this site and had a tasty, and filling, Greek dinner.

Texas Slaw

Very good!! I would probably add another two or three jalapenos next time, just to spice it up a bit more. I used "light" ranch dressing & 2% shredded cheddar to cut down on the fat and it was fantastic - a nice change from some of the sticky sweet cole slaws.

Asian Lettuce Wraps

Very good. It did need additional hoisin, chile paste, soy sauce, & sesame oil. We mixed the rice into the pork mixture which made filling the lettuce leaves a bit easier; however, they are still quite messy. Messy, but yummy!

Hot and Sour Chicken Soup

Chocolate Cakes with Liquid Centers

Fantastic! This needs waaayyy more than 5 stars! I've had dessert like this in restaurants and had no idea how simple they were to make! I added a little vanilla to the batter & baked for 12 minutes based upon suggestions. They were perfect - little chocolate cakes that just ooze a delightful chocolate center. They're also not terribly sweet, just really, really chocolatey! Incredible!!!

Burrito Pie

Not great. Even with all of the ingredients, it still tasted pretty bland to us and the flour tortillas were sticky. It might be better if the tortillas were toasted a little before adding to the casserole or corn tortillas might work. It wasn't worth the effort and this is one I most likely will not be making again.

Hash Brown Quiche

This was so yummy & easy! My husband and I ate the whole thing! I used 3 eggs but will use 4 or 5 next time. We put Tabasco on top which was ever so tasty. I'm also going to try adding green chiles next time, but it's great as it is!

Italian Bread Bowls

These turned out great! They were perfect for chili. I, too, added about 1 Tbsp. of sugar. Also, because my yeast was a little past its prime, I used 3 packets instead of two. I had no problem with them being flat. From some of the reviews, it seems as if some are trying to making the dough bowl-shaped before baking. That's not how bread bowls work! You have to cut off the tops and scoop out the bread inside (and save it for bread pudding!).

Daria's Slow Cooker Beef Stroganoff

Pretty good - average slow cooker recipe. I used fresh mushrooms and only 8 ounces of light sour cream which was plenty. I think 16 ounces would be far too much. I also thickened the gravy at the end with cornstarch.

Jagerschnitzel

Outstanding! I've been looking for a good jagerschnitzel recipe - this is just like the one at my favorite German restaurant, maybe better. I used fresh mushrooms instead of canned & served it over spaetzle. Comfort food at its best!

Slow Cooker Taco Soup

Yummy! Okay, my changes were: 2 cans of pinto beans instead of chili & kidney, 10 oz. box of frozen corn, 4 oz. can of tomato sauce, and 1 can of rotel instead of diced tomatoes. I don't care for overly-tomatoey stuff, so this works for me. I also use the "hot" variety of the taco seasoning. This is sooo good. The crock pot is a great idea, but I usually just throw it all on the stove & it's ready in about 20 minutes. We also put crushed tortilla chips & cheddar cheese in the serving bowls.

Southern Grits Casserole

This was really good. I did use egg beaters in place of the eggs as well as reduced fat sausage & cheese. I also added some minced garlic & a can of green chiles. Served this at brunch & everyone loved it. They never even knew that I had "lightened" the recipe...and I didn't tell, either!

Frozen Mojito

Very tasty and much easier to make than the traditional mojito. I put the mint in the blender first and had no problems with needing to strain the leaves - they became miniscule fragments! These are great when it's hot outside - refreshing, sweet, and powerful!

Feta Cheese and Bacon Stuffed Breasts

"Eh." That's all, just "eh". Nothing spectacular here. As noted by other reviewers, this recipe calls for too much oil & oregano. I cut back on those ingredients & added more lemon juice to the sauce. I also used a kalamata olive/sun-dried tomato feta and still the flavor was just average.

Pretty good, but I thought it had too much of just about everything for the amount of greens - too many nuts & apples as well as too much cheese & dressing. The flavors were good, so I will try this again with the same amount of greens & half (or less) of the other ingredients.

Fra Diavolo Sauce With Pasta

Excellent! I omitted the scallops & doubled the shrimp. I also used 2 cans of petite diced tomatoes and added about 2 Tbsp. of chopped kalamata olives. This is just sooo good - and I don't typically like tomato based dishes!
