Pistachio Crusted Chicken Breasts with Sun-Dried Cherry and Orange Sauce

This was wonderful! I served it for Easter (dietary restrictions eliminated lamb and no one in my house is a big fan of ham) with wild rice and roasted baby vegetables. I would suggest that only half of the breading is needed. I ended up throwing out a huge amount full of VERY expensive pistachios!

Grilled Broccoli

We thought this was okay but we prefer our usual. We just coat broccoli florets with butter or butter spray, drop them in the grill basket, then grill until they look "ready".

Baked Dijon Salmon

Very tasty, easy and fast. Great for a weeknight meal. Served it with wild rice and roasted asparagus. This would probably work well on chicken, too.

Roast Pork with Maple and Mustard Glaze

Very tasty and easy! I sprinkled the roast with salt, pepper, garlic powder, and sage and browned it before putting it in the oven at 425 for 30 minutes. Reduced the temperature to 375 until meat thermometer reached 160. I also basted it perodically. I had no problem with the sauce being too thin - it thickened quite nicely by the time the roast was ready.

Garlic Carrots

Very easy and tasty side dish and a nice change from sweet carrots. Served it with Roast Pork with Maple and Mustard Glaze (from this site). It went well with the sweet sauce from the pork.

Corn, Sausage and Pepper Chowder

This was really good and very hearty! After reading the reviews, I decided to double the cumin & white pepper. I'm glad I did; the spices were just right. I also added a couple of minced jalapenos with the peppers and onions. Additionally, I replaced the milk & cream with fat free half and half. I inadvertently allowed the finished product to come to a boil causing the half and half to curdle. I remedied the problem by adding a cornstarch slurry. We had this on a night when the temperature reached 12 here in the Fort Worth area. It was a perfect meal for a night like that! I'm going to make it again soon with bacon instead of sausage. Lots and lots of bacon.

Cranberry Relish I

This was the best cranberry relish I have ever had! I followed the recipe exactly then added about 1/4 cup of chopped pecans. It was perfect with our Thanksgiving dinner. My family has tried dozens of different cranberry recipes and we've finally found a keeper!

World's Best Lasagna

Great lasagna! I made just a few changes: mild Italian sausage, reduced the sugar to 2 teaspoons, substituted 1/2 cup of red wine for the water, and used oven ready noodles. I will definitely be making this again. The only additional change I will make will be to cut the salt in half as it was just a bit too salty for us, but this could be due to the reduced sugar. This was really good right out of the oven, but it was AMAZING on the 3rd day!

Super-Delicious Zuppa Toscana

This soup is wonderful! During the unfortunate times that I am dragged kicking and screaming to the odious faux Italian chain to which so many of the reviews here refer, this is the ONLY thing that I will eat. It's actually quite tasty. The best part about making this soup at home is serving it with crusty bread rather than the oil & salt saturated dough they call breadsticks. I went ahead and used the spinach the first time, but will use kale in the future. I drained and rinsed the sausage, used red new potatoes, and substituted fat free half & half for the heavy cream. Great rainy day meal, especially with some red wine.

Cabbage and Kielbasa

Very tasty & great for a rainy night. First, I sliced & browned the sausage then removed it from the pan. Next, I cooked 5 slices of bacon until crispy and used the drippings to cook the onion and potatoes (4 sliced red new potatoes). I included the crumbled bacon with the sausage and exchanged the water for red wine. We had this with dark rye bread and Warsteiner. Prosit!

Cucumber Slices With Dill

Really good! I used only one cucumber (a VERY large cucumber!), omitted the sugar completely, but kept the rest of the ingredients the same. Next time, I think I will chop the cukes, but continue to omit the sugar. I prefer the tang of the vinegar.

Beans and Greens

We thoroughly enjoyed this recipe. I sauteed an onion and some fresh garlic before proceeding with the rest of the recipe. I also added some sliced smoked sausage for my family of carnivores, doubled the great northern & pinto beans, and omitted the kidney beans (not a fan). Finally, we added lemon juice & Tabasco to our individual servings. This really kicked up the flavor & we had a fantastic meal!

Easy Marinated Vegetables

We thought this was great! I used Cardini's Light Greek Vinaigrette as well as adding kalamata olives & mozzarella cheese chunks. I would have preferred it without the olives and cheese - I kept picking them out to get more of the yummy veggies. A great way to fit in LOTS of vegetables.

Fried Corn with Smoked Sausage

We really enjoyed this recipe - very easy & very tasty! I added some chopped garlic with the veggies and cooked it all for awhile before adding the sausage. I used a cast iron skillet & cooked it all for longer than called for so the vegetables carmelized a bit. I also omitted the MSG.

Chile Prawns

Hot, hot, hot!!! I followed the recipe, except for the "hot ketchup". For this, I mixed regular ketchup with Frostbite hot sauce (http://www.cajohns.com/). The flavors were outstanding! I will make again, but eliminate the crushed red pepper. It can be added to individual plates as desired. I served this over rice with the Bacon-y Bok Choy from this site. Yum!

All American Roast Beef

This was a very tasty combination of flavors. I like to put thinly sliced pieces of fresh garlic into slits in the meat to infuse the entire roast with garlic.

Roast Chicken with Potato, Olives and Greek Seasoning

Very tasty! The chicken was somewhat greasy - I think next time I will lessen or eliminate the butter; used fingerling potatoes and they were thoroughly cooked when the chicken was done.

Acorn Squash with Apple

This is so good! It's extremely easy - what a great way to peel a squash. This recipe has just the right amount of sweetness and tastes like autumn. It also made the house smell amazing!
