Jimmbo's Garlic Knots

Easy and yummy. Only took ten minutes start to finish. I also mixed half butter with the oil and nuked it with the garlic and spices. Then tossed it all with the warm knots and Parmesan cheese.

Banana Crumb Muffins

Guess you aren't suppossed to fill the batter to the top of the muffin pan...I'm not usually much of a baker. I DID though and got 8 HUGE delicious muffins:) Only change is I used the oil like someone said instead of melted butter and 1 extra banana because I needed to use it.

Chipotle Crusted Pork Tenderloin

This is soooo good. Not for the faint of heart as it does have a lil kick to it;) But I have southern roots so I like a little spice. It turned out perfect, crusty and tender. Update: I realized I'm using Chipotle 'pepper' instead of 'powder'...maybe that's why mine is a little more spicy. BUT...I love it this way!!

Korean Spicy Marinated Pork (Dae Ji Bool Gogi)

This is my new favorite food, seriously I can't wait until a week goes by so I can make it again. I use Sriachi hot chili sauce instead of the korean hot pepper paste (couldn't find the paste). I also leave out the hot pepper flakes so the kiddos can eat it. It is still spicy and delicious... YUM!!

Caldo de Res (Mexican Beef Soup)

This is sooooooo good! The recipe says to serve the bones in your bowl but I pulled those out and the round fat and gristle that were attached to the bone. They just were not look appetizing and I was already throwing a new dish to my family. I cooked pretty much as the recipes said with only the addition of some cumin (as other reviewers suggested) and a can of the HOT rotel. That one can gave the whole soup a nice kick. Plus, I probably added to the cooking time quit a bit just making sure my meat and then the veggies were tender. I used all the toppings suggested, I didn't need the jalepeno though because of the rotel. Was really surprised at how good the squeeze of lime complimented the dish. This is an excellent dish, not typical, very surprising wonderful flavors.

Mom's Mexican Cornbread

I used 2 prepackaged cornmeal, mix them seperate and add one jalepeno to each. Put one mix on the bottom of pan, add meat, corn and cheese, then put the other mix as top layer. Makes a "stuffed" cornbread. My whole family loves it.

Macaroni and Cheese with Caramelized Onions and Bacon

WOW, this was AWESOME. Made it for Christmas and then again for a New Years party because it was so good. I did double the toppings but that's the only change. Guests said it was the best mac and cheese ever and I agree. Definitely lots of work, but well worth it.

Turkey Pot Pie

This is AWESOME! I made this last year with my leftover turkey and made again this year (we had Thanksgiving early as my husband is deploying). I have a family of four and there are no leftovers. Soo... watch out if you really are trying to serve 8 as the recipe states. I make this recipe exactly, which is amazing as I usually think I can improve on most recipes to suit our tastes. This one is perfect as is. Enjoy!!!!

Dee's Roast Pork for Tacos

This was really, really good. It did take much longer (5 hours) for the pork to cook in the oven and my roast was only 2 1/2 pounds. I added extra cayenne pepper and some cumin. After shredding the pork I fried in white corn tortilla shells, was awesome!

Different Chicken Cordon Bleu

WOW, was this ever salty! And I'm a salt freak! (love salt) I made this recipe exactly, you can tell it will be awesome without all the salt. I'll definitely make again, but will leave out the teaspoon of salt and maybe use low-sodium soup. Will be a keeper with these couple of tweaks.

Sombrero Fajitas

This recipe was a big hit with my family. I combined instructions from the actual recipe and advice from CHEFBAUER's review. Especially the slicing of the meat after cooking. I cooked the steak in the broiler for 10 minutes each side. The added bacon really helps these fajitas stand apart. This will be my main recipes for fajitas from now on.
