About this Cook
I'm a wife to a wonderful husband and just became mother to an adorable little boy. I love to cook and create new dishes - and my husband loves that I love to cook. Neither of us are picky eaters, and we love a variety of foods so this website has been an inspiration and a lifesaver at times!
My favorite things to cook
I love pastas (probably just a little too much.) We cook a lot of chicken, LOTS of vegetables and probably visit Italian and Mexican dishes the most - but I'll try anything once (or more).
My favorite family cooking traditions
Growing up in New Zealand I have a lot of family recipes that I adore, Pavlova, Orange Slice, Trifle, things that use vegemite (yes, I said it)but my husband has roots in Mexico and so I love cooking Mexican dishes, even though he didn't grow up with them.
My cooking triumphs
I have mastered a creme brulee with my culinary torch. I make a spinach stuffed chicken breast wrapped in bacon that my husband swears could be sold in restaurants... and I have an amazing lasagna that always gets compliments. But really... I consider any great meal that we both enjoyed a triumph!
My cooking tragedies
Tapioca... I need heavier based saucepans because it ALWAYS burns no matter how much I stir.

Grilled Salmon Steaks with Savory Blueberry Sauce
I thought this was fantastic. I had a bunch of blueberries that I needed to use and was so excited when I found this recipe. I reduced the balsamic first and that made a huge difference in the sauce not being too overpowering in the vinegar department. I had a big salmon fillet so I baked it in the oven with some butter and light seasoning and the sauce was absolutely delicious with it. Served with wild rice and green beans and both my husband and I loved it! I will definitely make this again.

Potato and Bacon Salad
For years I've been a fan of my grandmother's potato salad, and so was quite distressed when I couldn't find her recipe the the other day. So I hopped on good ol' allrecipes.com and came across this WONDERFUL recipe. SOOO easy, SOOO delicious, and I'm sorry to say Grandma... I won't be going back to yours. I made the recipe almost exactly as written, but used red potatoes so I didn't have to peel them, and also doubled the bacon as a few people suggested. I didn't have parsley on hand so sliced some bell pepper rings on top for garnish ~ it was quick, easy and what a winner, my husband has already begged me to make it again.

Chicken Tortilla Soup I
This was so delicious! I took other reviews advise and substituted the oregano for the cumin. I also used plain chicken broth instead of the water and doubled the corn as I didn't have hominy. It was so easy, smelled amazing while cooking and tasted incredible. It was a huge hit and I will definitely make it again!!
