Classic Peanut Butter Cookies

Tasty and simple! Made them exactly as per the recipe and had no troubles with flat cookies - maybe it depends on the kind of peanut butter you use?! Also, I just pressed them with the fork enough to make the criss-cross pattern - not actually "flattening" them. Will try adding vanilla next time.

Roasted Cauliflower and Leek Soup

Very very Good! Versatile and easy! In my opinion it honestly doesn't need the cream!! - I used 1% milk and blended the soup a little to get rid of large chunks. As others suggested I also reduced the pepper, added some broccoli and used whatever herbs I had on hand instead of chervil. Definitely a keeper!

2 things you must know about this recipe. First, Swiss food is meant to be rich - this is delicious, but definitely rich (at least with cheese on top). Second, I think it needs to be stressed that the potatoes should only be boiled ~15 mins (they cook further in the pan afterall) - I overcooked mine and though it was still tasty, it would have been better slightly less soft. I too cooked this without a lid and without the milk - it's meant to crisp up and brown on both sides. A great dish to experiment with! We fried up onions and mushrooms to go with ours.

Game Day Hamburgers

I halved the onion soup mix and the burgers were still great. My only complaint is that I didn't get as much flavour as I'd like from the potato and mushrooms so I'll try frying them up first next time. Also, as suggested by others, sandwiching the mix between 2 thin patties is far easier than making a pocket. Can't wait to try this recipe with other fillings!

I used only what spices I had on hand (Italian herb, basil and parsley) and about half the suggested cream. Also did not have wine but the sauce was absolutely wonderful!

Chipotle Shrimp

This is an absolutely fantastic recipe. I was looking to replicate a dish we had in a restaurant and this was very close. The salt is absolutely unnecessary and I recommend removing the chipotle seeds - we love hot food, but this recipe can easily get too spicy.

Mexican Layered Dip

Excellent recipe, however I highly recommend using a store bought bean dip rather than plain refried beans, adding a layer of salsa and, as others have said, mix the taco seasoning with the sour cream! Home-made guacamole also makes it better.
