Extreme Banana Nut Bread 'EBNB'

ABSOLUTELY THE BEST BANANA BREAD ANYWHERE! This recipe kills every other one I've tried. It's even better than my mom's - which is fantastic! I add extra walnuts than called for - mmmmmmmm! Thanks for sharing this!

Cream Cheese Frosting II

The consistency varies each time I make it. I think it has to do with the amount of beating that takes place. I beat the cheese with vanilla first until smooth as RALWATTAR suggested and it helps with any clumping of cheese. I also add more powdered sugar for chocolate cakes and less for carrot or bar type cakes. I've only used it on a sheet cake and cupcakes so I don't know how this "thinner" consistency icing would fair on that. Thanks so much for sharing such a delicious and versatile icing! I just LOVE the cream cheese taste!!

Meatloaf with Italian Sausage

Pretty good base. I added veggies like carrots, & corn & brocolli for substance and it turned out pretty good. I also added a BBQ/ketchup mixture on top to seal all the good stuff in & so it wouldn't' burn on top - it got dried out everywhere the mixture wasn't added.

Spicy Garlic Lime Chicken

FABULOUSLY FLAVORFUL AND SO QUICK & EASY. It took longer than 5 minutes prep time, probably 15 minutes because I pounded the chicken and slit the chicken breasts in half and spread the seasoning inside. I doubled all ingredients EXCEPT SALT and it was about right for the large breasts that I had. Will make every time I have lime in the house! YUM!

The Best Lemon Bars

This was ok - very good taste, but consistency was not very good. I made it 3 different times trying to adjust for the softness and could not get it to come out right. If you don't mind the softness (to the point it falls apart with bars in the center of the dish) it is good.

Throw Together Mexican Casserole

This is a GREAT base recipe. I did my own things to it as well including adding the diced tomatoes, added chiles & taco sauce mentioned above but I also added some cheddar flavored fried onions on top with cheese and changed the beans to pinto. I hate egg noodles so I use pasta shells or macaroni. I prepare this recipe and then put 50% of it away in the freezr before cooking it makes so much! Even then - it feeds us 2-3 times with only 1/2 of the recipe! PS: I tried chunky fresh garlic salsa (LARGE jar) once and it was wonderful! NO matter what I seem to add to or subtract from this recipe it seems to come out of the oven perfect for hungry people!

Ranch Crispy Chicken

It was WAY too salty so the kids wouldn't eat it. I think next time I will 1/2 the dressing mix amount to cut back on the salt content. It WAS easy though!
