Torsk

Reviewed: Mar. 10, 2010
I made this for dinner tonight and it was a big hit. After his first bite, my husband exclaimed, "This tastes just like lobster!" My 6 yr. old who likes fish went back for seconds and my 4 yr. old who does not like fish, actually ate some. I added a little bit of onion powder on top while broiling, but other than that, as written. Delicious and a definite keeper! Thanks!

Broiled Tilapia Parmesan

Reviewed: Jan. 16, 2009
I just made this tonight for dinner and it was great. I don't make fish often, because it never turns out, but this was easy peasy and yummy. My 5 yr old dd asked if we could have it again tomorrow night! I didn't have celery salt on hand, so I used celery seed and added a dash of sea salt, I also mixed parmesan and romano cheese, added a dash of garlic powder, used LF mayo and like other reviewers suggested, sprinkled the fish w/ a bit of old bay. This recipe is definitely a keeper. Thank you!!

Easy Mexican Casserole

Reviewed: Jan. 19, 2007
I've made this recipe twice now and we really like it. The first time I used 3 bags of the 100 calorie ranch flavored doritos on the bottom of the casserole. While we liked the flavor, we did not like soggy doritos. I also used light sour cream & 1/2 pkg of taco seasoning w/ beef both times. The second time we just used low-fat tortillas chips and scooped the casserole onto the chips - much better. I also used a pinneapple salsa and it was yummy. My husband really loves this recipe, so it will get used often. Thanks!

Apple Hermits

Reviewed: Jan. 10, 2007
I'm sure this recipe is fantastic the way it's written, because we liked it with my changes. We're dieting at our house and this seemed like a fairly healthy cookie, so I made the following revisions to make it healthier: whole wheat flour, 2T butter, 1/2 c. applesauce, Splenda brown sugar, 1/2 c. pecans, 2T Cinnamon plus spice blend. I soaked the raisins which helps add moisture to the mix and used an electric chopper to get a finer chop on the apple. They do have to be formed by hand. They are a sweet, moist cookie with a good flavor. We skipped the glaze because they don't need it. I made a few w/out raisins & nuts for my young girls and they ate them. And my husband who is picky w/ treats said they tasted healthy, but were really good. Happy to have found this recipe. Thanks!

Creme Brulee French Toast

Reviewed: Jan. 3, 2007
After a few bites of this my husband said: "Two words, Dee-Licious"! We did not soak overnight, nor remove the crusts and added orange juice concentrate. Soooo yummy! Definitely a keeper. Thanks!

Supreme Scalloped Potatoes

Reviewed: Jan. 3, 2007
This is exactly the kind of scalloped potatoe recipe I was searching for -with sour cream. After a few bites, my husband declared: "These may be the best potatoes I have ever eaten." I halved the recipe (except for soup) for my small family and it still made plenty. The only other variation I made was using half a can of cheddar french fried onions instead of regular onions. I just happened to have some left-over, so tried it and it was good. I thought I might try some other variations next time, but my husband begged me not to saying "the recipe is perfect as is." So, this will remain a permanent recipe in my file. Thanks!

Frank's Famous Spaghetti Sauce

Reviewed: Sep. 21, 2006
This recipe was sent to my e-mail at the perfect time. I had just picked gobs of fresh tomatoes, onions & basil from a local farm & was looking for a new spaghetti sauce recipe. The ones I have tried in the past have been too "tomatoey" according to dh. This one is a keeper, even the little spaghetti lovers in our family liked it. I did make the following revisions: More oregano, basil (fresh) & garlic. Fresh tomatoes, no sauce, 1 can paste and balsamic vinegar and brown sugar as suggested by reviewer J. Logan. We felt this gave the sauce a really unique, tasty flavor. I will be bottling this recipe (minus the meat)in the next couple of days. Thanks Frank!

Italian Summer Squash Polenta Bake

Reviewed: Aug. 26, 2006
I've made several Summer squash recipes from this site and this is one of the best. My husband who is not a huge fan of Summer squash went back for seconds on this one and my 3 yr old even ate some. I did not have enough mozarella, so I combined it with cheddar. Yum. We served it w/ Italian crockpot chicken breats for a nice meal. Thanks for the recipe.

Creamy Veggie Fondue

Reviewed: Feb. 16, 2006
I made this fondue for our Valentine's dinner and we all loved it. Tangy and flavorful. I did use fresh baby spinach instead of frozen and it turned out very good. Served it with beef, chicken & veggies. Will make again. Thanks!

Strawberry Avocado Salad

Reviewed: Feb. 16, 2006
I made this salad to go with our Valentine's dinner and thought it was excellent. It has a unique flavor - different than any other green salad, which was nice especially for my husband who gets sick of eating salad. I had some Feta Cheese on hand so I threw some of that in and thought it was a nice addition. Will make this again. Thanks.

Christmas Brunch Casserole

Reviewed: Dec. 30, 2005
This was a very tasty Christmas morning breakfast. I used the following suggestions from other reviewers: I used O'Brien potatoes, pre-cooked bacon (zapped in microwave for a few seconds for crispness)used 6 eggs instead of 4 (will try 8 next time) and increased the cheese amount to 2C. I also used real garlic powder and then added regular salt. I think this helped the flavor. I put this in the crockpot before church and cooked on high for 2 1/2 hours. It was ready as soon as we walked in the door. The flavor was great and big hit with the family and Christmas company. Will be a Christmas tradition from now on. Thanks!

Quick Chicken Marsala

Reviewed: Aug. 23, 2005
I tried this recipe last night in the crockpot and it was so good, the whole family liked it! I added frozen chicken breasts into the sauce and also added fresh mushrooms, chopped onions, a tiny bit of garlic and a pinch of oregano, basil and thyme. I cooked it on low for 4 hours and it turned out perfect. This one is definitely a keeper! Thank you!!
