Pumpkin Pancakes

These pancakes were delicious! As suggested by another user, I put all the wet ingredients, along with the brown sugar and the spices, in my blender and I blended it all up until it was smooth. I then whisked it into the dry until it was well blended. The batter is a little thick, but if you scoop them out with 1/4 cup and spread the batter around a bit, they turn out so good. I also added another tablespoon of brown sugar and a bit more cinnamon, but those were the only changes I made. It's almost like eating pumpkin bread in pancake form. Would also be good with semi-sweet mini chocolate chips in them. Thanks for the recipe! It's a keeper.

Thick Cut-Outs

I don't think I can say enough good things about this recipe, to be perfectly honest. I made them for Christmas 2011 and they were amazing. They rolled out and cut super easy and they baked up perfect! The only change I made was I added about 1 tsp Vanilla and 1/2 tsp of Almond extract. Then when I made the icing I used only almond in it. They were so delicious and really easy to decorate.

Mrs. Sigg's Snickerdoodles

I just made these cookies today (12-21-2009) and they are fabulous! I did make some changes as suggested by others. I used two sticks of better, no shortening. I used baking powder in place of the cream of tartar and I also poured off just a little big of the egg white. They came out DELICIOUS. They're soft and chewy and have such a nice cinnamon flavor that isn't overpowering. I also used a melon baller to get my cookies, relatively, the same size when I rolled them. I will be using this recipe for years to come. Thank you for it!!

Four Cheese Macaroni

Great base recipe, but the next time I make it I will be changing a few things. This time around I used one egg and 1/2cup more half and half. Next time I will leave out the eggs, use a little more half and half, and a lot more of the sharp cheddar and the processed cheese. But, all in all, very good.

Big Soft Ginger Cookies

I made this recipe two Christmas' ago and I rolled out the dough to make Gingerbread Men. They were so good and the dough is really easy to work with once it's chilled. This is my go-to gingerbread cutout recipe. And the cookies stay nice and soft, which I love.

Chewy Coconut Cookies

I made these for Christmas (2007). They were wonderful! I had some left over pecans from another recipe and I added them to the mix and they just made the cookies even better. Awesome cookie!

Grilled Italian Burgers

I'm only giving three stars because I haven't tried this yet, but it sounds good. The only thing I can say is that these sound more like a Greek style burger, not much of anything "Italian" in it except for the bread crumbs. Kalamata olives and the feta cheese are used more so in Greek dishes. Anyways, this sounds really tasty and I'll have to give it a try soon.

Fruit Dip II

This is probably my favorite fruit dip! It tastes almost like cheesecake and is so good, I could probably eat it with a spoon and forget the fruit, but the fruit is what's healthy, so I eat it! I love it on fresh mixed berries and summer melons! :)

Chocolate Mint Cookies I

I made these last year during the holidays and they are SOO GOOD! They end up tasting like a chewy Thin Mint. YUM! Only thing is make sure you store them in an airtight container or a ziplock baggy because if the air gets to them they get a bit hard.

Penne Russo a la Vodka

I made this tonight for my mother's birthday dinner and it was fantastic! I tweaked the recipe a tiny bit, but I basically kept it all the same. I cut about 5 chicken breasts in chunks, seasoned them with a tiny bit of salt, pepper, and garlic, heated up a bit of olive oil in the pan and added the chicken. I let the chicken brown on one side and just cooked it a tiny bit on the other. I removed the chicken from the pan and put it in a bowl covered with a plate to keep the steam in. Then I followed the recipe only I added half a medium onion to the garlic and prosciutto and I used a big can and small can of diced tomatoes... I used 1/2 cup of Grey Goose, instead of a full cup...It came out sooo GOOD! The next time I make this I am going to do a big can of crushed tomatoes and a small can of diced to make the sauce a tiny bit thicker, but it should have the same taste and I might add a bit more proscutto the next time too...I will be making this again and again!

Stuffed Mushrooms with Spinach

I love these! My cousin sent me the recipe to make for Christmas one year and we've been making it for the holidays ever sense! The filling is so good that if we have some left over, my mom and I eat it, haha! This is yummy!

Garlic Cheddar Chicken

I just made this tonight for dinner and it was very yummy! The next time I make it though I'm gonna use unsalted butter cause I'm not big on salt and neither are my parents, and it was just a tad bit salty using the Parma chees, butter, and salt.. So we are cutting back on that, but other than that, wonderful dish! Very tasty and super easy!!
